Cooking for one

I'm feeling chuffed with myself - I put some serious effort into prepping today.
Prepared lots of bits for use over the next few days: cucumber / beetroot / celery / little gems / mushrooms / onion / courgette / peppers / grapes.
Slow roasted a huge batch of peppers - will use in lasagna and veg chilli.
Peeled and cooked all my apples and will then use them in a crumble and with some yogurt.
So now I can just go in and throw things together as I fancy them (to help with those CBA days) - I did my last big prep on Sunday and have definitely eaten more healthily as a result.
I'm eating some chocolate to treat myself.

Cucumber - pointless wet stuff. Beetroot - OK but stains easily. Celery - no thanks, dislike the taste and texture. Little gems - pointless crunchy stuff. Mushrooms - ewww. Courgette - ewwww.
That'd leave me just onion, peppers and grapes0 -

Now you see I feel the same about aubergines - they always seem slimy to me... don't know why.:hello:0 -

Another thing that "grates" is the constant mentioning of lentils and porridge when people put together "cheap menus". Nasty ... both of them0 -

Throw them away - life's just too short to be eating stuff your won't enjoy.mcculloch29 wrote: »Or make rolls into breadcrumbsmcculloch29 wrote: »I had planned on having fish and wedges, then a leaflet for a pizza company dropped on to the mat...
No, of course I didn't, but it did put pizza in my mind whilst gawping at the prices (£18 for 1 pizza?!).
Today's menu is a tricky challenge, called "spot the healthy bit".... it's a tough one.
Bread roll, burger, ketchup.
10 chocolates.
Chocolate trifle pot.
Macaroni cheese ready meal.
Toasted bread roll, 50g cheese, 1/4 tin of baked beans.0 -

I regularly use rough oats for flapjacks / crumbles and like smaller oats for a nice smooth porridge served almost in a soupy consistency with oat milk.
Lentils - I use sparingly as they don't really agree with me. I avoid them where possible. If I want to bulk stuff out then I'll use rice, couscous, carrots or soya.

The only veg I can think of that I don't like is okra and even then it's ok in tempura batter and deep fried, not that not eating it has any impact on my diet lol:)
PN- I've not had the healthiest of eating days either though did have veg soup later this afternoon and having tomato and green beans with my "Bird's Eye Gastro Fish" pie which seems to have smidgeon of spinach in itLentils I love but they aren't everyone's go to, me I can eat them until my digestive system protests......

What next though? Sackcloth underpants as punishment for overspending?
Sometimes you've just got to forgive and forget.

money, I had the window installers in on monday, to replace a glazed unit. They were collared by a neighbour who needed them to tweak a window they installed. Honestly, they went almost straight over to her, grumbling a bit but saying that she is scary, like a fierce school teacher. I am wondering if that is the way for us older singles to be. It is the opposite of me, who gave them tea and brownies but eg I have been waiting 6 weeks for a plumber, who is finally coming tomorrow. Is it worth being nice ie treating them like human beings?
What can ya do?
Personally - I don't do snacks for workmen (but then I don't tend to do so for myself either). When I am making a drink for myself anyway - then I make them one too.
Neighbours can be "on the lurk" for the chance to catch one of your workmen sometimes. I think I've just had that happen to me once though. My workman told me what the neighbour was after and I told them "That's your choice/totally up to you what you do about it. But my job must be finished first obviously. That's what you're here for".
Weary today - should be going out this morning and can't summon up the energy to do so after all that (and the consolatory glasses of wine - ahem....).
Got to have new flooring now in my kitchen that I wasn't planning on. Long story.... So I'm in process of figuring out what/getting quotes for it.0 -
I have a neighbour who uses the same gardening lady I do and seems to come over to talk to her for quite a while every time she is at the front.
I wouldn't mind but my garden is in a much worse state and really needs her at the moment.
Another neighbour use to always have a quick chat with the builders when he was out but I never minded that as he is a really
good neighbour and never took them away from what they are doing.
Someone is coming round next week to repair / partly rebuild the staircase as it is unsafe so that should be fun. Previous owner has bodged so much stuff I am beginning to wonder if he has deliberately booby trapped the place but that way madness lies.
I need to go shopping later for fruit and veg, collect prescriptions etc am waiting to hear if and when I get family over to cook for so I know how much to get.
Have had six days of more sensible eating and have lost three pound so fairly pleased as I have not been starving or depriving myself."This site is addictive!"
