Afternoon everyone,
So far today I have had scrambled eggs for breakfast. I've still got the blisters on the roof of my mouth from burning porridge yesterday so decided to skip the toast and have an extra egg instead.
I opened another of my large stockpile of tuna for a sandwich at lunchtime, and I have dug out a crustless quiche from the freezer to have with some steamed veg and new potatoes for dinner this evening. While I was rummaging around in there I found a couple of blueberry muffins, so I liberated them and have just had one of them, I will have the other one this evening.
If I don't fancy using the half a tin of tuna that is left over tomorrow in a sandwich for lunch I think I may make a pasta bake with it for dinner tomorrow.0 -

I've got a really great Oxo Good Grips box chopper for cubing veggies to get the beets cut small enough for salads etc.
As these were different colours I wrapped them each in tinfoil and steamed for 45 mins. Once cool I peeled them - I use disposable gloves for this. If they are the same colour I don't bother wrapping in foil. If you leave the roots on and an inch or so of the stem you don't get much bleeding.0 -
Afternoon everyone,
Last of the quiche and the remaining beetroot for lunch with a mug of the soup. Tonight I'm veering away from LOs (it's just really cheeses now and they'll be fine for a while) and having jerk spiced chicken thighs, a baked sweet potato and roasted flat mushroom.0 -

More "grab what I can" stuff tonight - another day of kitchen decorating later.
So it was the rest of the falafels, some steamed asparagus, hummus, tomatoes and...yep....a bit of toast.
At the proposal to leave my kitchen all cluttered up with decorating materials - again - tonight when it's nearly finished my foot was Put Down with a VERY heavy thud that it was not going to happen and I WAS going to start using my kitchen properly or....(insert as applicable). It wasnt put quite like that - but I lost my patience finally at the thought of being deprived of the full use of my kitchen one more day (when it obviously wasnt necessary with some minutes clearing up).:rotfl:
I think I've just gone up the wall and back down again in frustration after all these weeks and steam was starting to come out of my ears....:cool:

money, I had the window installers in on monday, to replace a glazed unit. They were collared by a neighbour who needed them to tweak a window they installed. Honestly, they went almost straight over to her, grumbling a bit but saying that she is scary, like a fierce school teacher. I am wondering if that is the way for us older singles to be. It is the opposite of me, who gave them tea and brownies but eg I have been waiting 6 weeks for a plumber, who is finally coming tomorrow. Is it worth being nice ie treating them like human beings?
Got into a tizz yesterday, to do with tyre maintenance, bitty eating all day as a result. Went into sainsbury to get something to eat and could not make myself buy pie, biscuits or bread. Grabbed a £1 salad box and a jar of dill pickled herrings and strawberries, walked straight past the sweeties. Oh those herrings were scrummy and fortunately I have half a jar left and am going out, another £1 salad will be bought. Fab value for money
Needless to say I ended the day looking in every corner for a sweet snack. Lol, so glad I got rid. I did eat one hm currant bun but there is not much fat ot sugar in them, compared to the brownies that I threw out. As a result, this morning my stomach is still flatter than it would have been
I am going to soak oats now with a few dried cherries, for my mouth hunger moment later in the day, it always comes so I am ready for it0 -

Yay, thanks all for your sympathy, it has been to Chelmsford since last posting, probably had a cuppa, then back to Portsmouth depot @ 4 this morning, on the van at 8.30. Keeps someone in work I guess, as well as me stuck indoors, new update "Your EIC Direct order will be delivered today by Mark, your DPD Local driver, between 11:29 and 12:29"
One good bit from this was I made mushroom pate as I knew would be stuck indoors this morning, did not use lentils in there, 'cos I do not have any for a start, and I have had bad experiences with them, the red ones anyway :eek:
It does not look very appetising, bit like something found in a litter tray. If I had not made it & know exactly what is in it it would be left on the side of the plate. Think part of problem was mushrooms were on last wrinkled legs, any more and I could have called them dried porcinni and been posh. But as I do know what is in there I may have some for lunch, which I will eat in the front room so no danger of missing Mark & my parcel
No breakfast yet, possibly munch a fly biscuit or two with my coffee later
Dinner will be the very last of the LO roast pork, with very last of LO HM spud salad, from there it gets a bit not sure, fresh tom maybe? Could crack open tin of beans but then back into LO land, 1/2 tin beans and round we go againGardener’s pest is chef’s escargot0 -

Meg72 I'm intrigued about dehydrating stir fry veg, do you leave as is or blitz it to make a stock base? Years ago Whitworths and Great Scot used to sell packets of minced dried veg which I used to like to add to soups and casseroles but it seems to have disappeared. Great Scot still do a broth mix with added dried veg which is fine but limits uses.:(
Farway - I make a lentil and mushroom pate if my veggie friend is here (though everyone scoffs it) if you have a blitzer it's no work at all. I just use any mushrooms I have and have made it without any added nuts (though it is nicer with them) and it's really tasty and feeezes well if there is spare. The tinned green lentils work fine if you CBA cooking them.
Sneaky eating- my downfall isn't snacking but I'm guilty of when there is slightly more than a portion of something so not worth keeping the excess of scoffing it all
Lunch today was a hodgepodge of LO bits from yesterday with a mug of soup to warm me up :)as it wasn't really salad weather. I eventually relented and popped the heating on mid-afternoon as there is a limit on how many layers I'm prepared to wear and the fleecy slipper boots are back on:mad:.
Sausage casserole tonight with steamed new season Ayrshire tatties. The spuds are so lovely - the first of the season and I did think about cooking extra but realised that would end up being a sneaky eating downfall so won't
I left the stirfry as it was and just picked out the chunky stalk bits as these take longer to dry. Never tried this before usually do separate veggies and my fave mushrooms. I like dehydrating stuff and am always amazed at how little you end up with. Two 500g bagsof stirfry resulted in half a storage jar full.
Ireally like to have a supply of dried onions but wait until a really nice day when I can have the doors and windows open as the smell is really dire. lol. Am seriously considering using an extension lead and putting the dryer outside the back door, when doing my next batch.Slimming World at target0 -

Meg thanks for the info, I'm definitely thinking a dehydrator might be worth getting and it's my birthday in a couple of months and the kids always struggle with what to get me...;)
I've just had a rather indulgent breakfast of poached duck eggs on toast it was lovely :)and hopefully will keep me going as I have a hospital appointment so won't get another chance to eat until late afternoon. Knowing I'll be unlikely to feel much like cooking this evening I've ordered a frozen fish pie to have this evening and I'll just nuke some spinach and broad beans to have with it.0 -
