Cooking for one

I'm not keen on SM scones they always taste a bit stale to me even when fresh:eek:
I love scones especially cheese, treacle or soda ones - if not HM as a wee treat from the bakers:)0 -
Absolutely you health is paramount so if it means a bit of waste or paying more for smaller quantities/ready prepped stuff then so be it:)
I could eat much more cheaply than I do but due to my Meniere's I need to minimise overly processed foods due to the salt and frequently MSG that is added. Don't get me wrong I do enjoy the odd pie or ready prepped meal but in the main I cook from scratch with decent ingredients. That way I can enjoy the saltier things in life such as bacon, cheese and bread without accidently adding loads more hidden salt. It's scary how many things have loads of salt in including many sweet things.....
I'm going to have to cook much more from scratch as well to make sure that I get a proper balance that includes everything I need.
I know what you mean about the hidden salt. I thought that food producers were trying to reduce the salt, but I have noticed that it has gone up in some ready meals and bakery products that I have been buying. I did wonder if it is because they are starting to reduce the amount of sugar that is in their products.0 -
I love crumpets, but love pikelets even more, as they're not as stodgy
My Nan used to make wicked scones"You can't stop the waves, but you can learn to surf"

holly, you can get very good protein if you have beans with a grain eg beans and rice or baked beans on toast. The only beans that are full proteins are soya beans and you can buy them in tins, they don`t need a grain to be balanced. Soya beans with salad and a baked potato is a very good balanced meal and soya beans taste nice. I suggest that you write out a rough set of meals every day or every week if you can, which will help with shopping and budget
I write my meals out almost every day, or I get side tracked. I ate out yesterday, at a big garden centre, had quiche and salad and managed to leave the couscous and the pastry base, I still felt that I had eaten enough.
I had a good meal at lunchtime, lots of veg in it and strawberries after. Finished some bacon with an egg earlier. I am quite liking to have cereal as a standby, not for breakfast but afternoon/evening
Beans on toast I can do, that is something that I think I need to add to a list of breakfast things, along with my usual scrambled eggs on toast. I don't like cereals, never have, not even as a child which isn't going to help. I was also thinking of having something like the Fage 2% Total greek yoghurt with different berries as a breakfast choice. If I stick to the 2% fat one that should be ok and having just looked it up it has a lot of calcium and protein. I think I have been struggling to get the calcium I need because I don't usually have hardly any dairy products. I have also bought some oats to have porridge. I thought that could be a breakfast or even a snack.
I'm going to start doing the same as you and write out what I am going to have to eat every day and do a weekly meal plan as well.0 -
While we're on the subject of scones, my DB and SIL are coming over tomorrow and my DB loves cheese scones and my SIL sweet ones. I usually make them with buttermilk but I haven't got any. Am I right in thinking that I can add some lemon juice to full fat milk to get the same sort of thing?0

They're the same as crumpets, but thinner. I like them crispy"You can't stop the waves, but you can learn to surf"

Holly, that yoghurt mix with berries sounds good but try and add a few nuts too, walnuts are very good for the heart and some rolled oats and sunflower seeds, then let it stand for a while to soak and thicken up. That is what I meant by cereal, I have similar soaking for my morning snack today and it is something to look forward to
I have excess kefir and have decided after reading scone posts, that I will be making scones this morning. I have a round small cheddar in a wax coating, from christmas and its a good one so I am going to peel the wax, grate the cheese and freeze it. Cheese scones will be just right with it as it is tasty cheese
Holly has your doc told you to cut down on salt? There is new thinking these days that the reduced salt guidelines were wrong. Salt is essential for our hearts to work properly, we used to have salt licks when we had horses and we should be sensitive to what we need, like the animals are. Our bodies tell us eg sometimes we can crave something salty, like crisps. I always add just two tiny grains of himalayan salt to my pasta water and I now put a little salt in my soups. My husband`s blood sodium level was very low, then soon afterwards he died while out keeping fit and healthy and almost all our adult lives we had this cutting out of salt. My family listen to what their bodies say and so do I, now
I don`t have any meal planned yet, got to put my thinking cap on, otherwise I will pick0
