    JOEDENISE, is your aubergine stew a SW recipe?

    No it's not a SW recipe. I had some aubergines and wanted something different to do with them so I just googled aubergine recipes.

    There were several recipes and I just took a basic recipe and changed it to suit the veg I had available. Then decided to add some green lentils to it to make it SP in case I wanted a SP day or meal.

    I thought the portion I'd frozen for DH and myself wasn't really big enough so decided to cook some pasta to go with it and just stirred it through. Ended up having enough for dinner last night and lunch today.

    There's still another portion in the freezer!

    Thanks Joedenise, I love aubergine, always on the lookout for new recipes. There is a lovely SW aubergine parmigiana one, which is a tomato base (with garlic, toms, chilli flakes, and cinnamon) layered up with sliced fried aubergine and lite mozzarella. I have it on a bed of spinach leaves. It's even nicer the second day.

    I'm hungry now...

    :T well done on the 2lbs. I'm glad the weekly syn bank worked for you. Denise and I do it all the time as do many others.
    look on the SW app to see how much syn damage there is in a cheese and bacon toastie I would be grateful. I have estimated 35 .
    But have purely plucked that figure from nowhere!

    Thank you so much MSM. Now, with that info and with syns planned for dinner, that now leaves me with 4.5 syns a day for mon to and including Friday which is manageable.
    I don't feel the rest of the week is doomed now. 😀😎

    Just checked my sums and I can have an average of 3 syns a day for this week.

    Managed another day of eating not much, but what I did eat wasn't too bad.
    Brunch - yogurt
    Dinner - roast chicken etc.

    Got the weekend pretty much out of the way now, so only 2 working days to go then back to the hospital, but at least it's easier to distract myself at work

    Thanks everyone for your good wishes on my losing three pound. I have 7 lb to go.hugs and congratulations to everyone else, bigger hugs for those that need them. :)

    My menu plan for Monday.. :cool::cool:

    Breakfast. Porridge A/B strawberries raspberries, blueberries.

    Lunch.. mushroom soup ( homemade ) Ryvita 3 Syns with cheese A orange

    Dinner.. double egg and s/w chips beans beetroot pickled cauli. Apple.

    Extra 2 crispbread 2 Syns plus 3syns for butter. Ff yoghurt Alpen light bar B
