Instructions on how to turn it off are included in that article.
ps From this morning on Anniversary version, 3 restarts and boringly, no drama, no privacy settings appear to have been turned back on, one slight question mark over the revised start menu.
Move along, nothing to see.0 -

Anniversary "introduced" 100% disk utilisation on an old desktop; tried disabling superfetch etc. No change. Reverted back to last Windows 10 build.0

Not really wanting to drag up 'flame wars'
but currently running W10 Home with 'classic shell' (Ver 4.3.0)
Settings/system/about says:-
Version 511
OS Build 10586.494
How do I know whether I have changed to the 'anniversary' edition?0 -
Version 1607 is the anniversary version
So I would say that you have not yet updated
The size of the update (over 3Gb) makes it pretty obvious when you receive it !!0 -
Anniversary is version 16070

You can download the image yourself and run an in-place upgrade(or a clean install) by burning image to DVD or creating bootable USB media and running setup.exe from File Explorer(or clean install from boot).
This is much the same as what happens when you click on the upgrade link. It downloads the image and runs an in place upgrade(obviously the easiest option).0
