    Coconut milk is optional, it was something I added to the original recipe.

    Totally agree with those saying about the HM soup btw. Quick and easy to make and easily doable within the £3 budget.

    You don't have to put coconut milk in, I don't and I make something similar. And soups can be almost stew like if you don't blend them. Chicken thighs, carrots, celery, potato, sliced cabbage/greens and a handful of pearl barley makes an extremely nutritious and filling meal.
  • Another cheap and easy thing to make and freeze is cornbeef hash. I've really got into batch cooking recently. Just have to learn to remember to write on the top of the foil container what is inside!

    I've been Money Tipped!
    Lunch for three of us for the week:

    24 rolls - £2.50
    Grated cheese £2.50
    Ham - £2
    Bananas and apples and tomatoes £2.00
    Crisps £1.00

    £10.00.

    Rolls made in advance go in freezer
    I also have frozen homemade soup which can be added for pence

    So two rolls, soup, piece of fruit, crisps each.
    Sometimes I add more salad etc so can come to slightly more but do-able.
    Never again will the wolf get so close to my door :eek:

    I'm going to start doing this too. I just looked at my bank statement for last month and the money I spend on food is beyond a joke. I need to sort this out asap.I don't know if I just buy food because I'm bored and want something to do, but now I can see what I'm doing I can fix it.

    Of course it's doable. How much do you reckon the raw ingredients of a shop bought sandwich cost? A little egg mayo and two pieces of bread for £2.99? It just depends what you want to spend your money on.
