    I do have a freezer with some space (although not much lol) and the milk is reasonably fresh (so far!) I thought I'd decant some into smaller containers to freeze and use later, and I will make a rice pudding or two (although I am yet to find a good recipe, I always overcook it).

    Why not try making a custard that you freeze as home-made ice-cream? The recipe I use is 3 egg yolks mixed with 3 tablespoons of sugar and 1 level tablespoon of cornflour - all mixed with a whisk in a heat-proof container - then separately bring to a scald, a pint or so of milk (by scald I mean the big bubbles are forming on the surface but it's not rising in the pan!) - pour the milk over the mix, whisking to combine, return it to the pan and stir until it thickens - if it is too thick you can loosen with a little more milk. The cornflour should stop in becoming scrambled if it gets a little too hot. As soon as it thickens it is done. Transfer to a container and cover with cling film in contact with the custard (so pushed down inside the container) - this stops a skin forming. Chill it, stir it, freeze for 2 hours, stir it again and freeze through. You could add yogurt or fruit at this stage to flavour it, prior to the last freeze. The fruit is best whizzed or mashed to get it through the mix.

    My rice pudding recipe is 1.5 tablespoon of short-grain rice (arborio or pudding), with the same of sugar to 1.5+ pint of milk (so a bit generous, but like a cup of tea, not cereal iykwim). Mix all together in a shallow oven-proof dish so the rice sinks and put a fleck of butter in and grate a little nutmeg over. I cook for an hour and a half at 130-140c and then let it stand for 15 minutes. I generally break the skin and make sure it is not too thick - loosening with a little more milk if it is. The 15 minutes standing time will thicken it. The low temperature will stop it overcooking, the butter will let you get the skin off the dish without nuclear detergents (and we like that bit of the skin best!)

    You could also pre-make white or cheese sauce and freeze it - ideal for a quick mac and cheese or vegetable gratin

    Last spend of the month today. I'd budgeted for £200 but have gone over by £36. All of the excess was spent on stocking up when DH gave me a lift to the supermarket last week-I got heavy stuff like toilet rolls and long life juice. I shouldn't need to stock up like that for about three months -the last time was before Christmas.
  • I'm ending the month on £269.93/£300 so under budget. Really pleased with that. Good luck to everyone else who's budget runs till the end of the month :)
