Sharing my menu plan this evening
OK, so I have gone through my freezer and cupboards to find meals for the next week so amazingly I don’t need to shop. Turkey features heavily because I have lots of the stuff frozen from my Christmas haul.
I am going do the envelope system this month for food…see how far I can go with £35 a week for the month, so £140 in the kitty…
I ALREADY HAVE…
Breakfast
Apple, seeds, almonds, maple syrup and yoghurt X1
Pear and blueberries with almond meal, linseeds and yoghurt X2
Scrambled eggs with mushrooms or tomatoes on almond and millet bread X2
Quinoa and chia porridge with yoghurt, maple syrup and blueberries X2
Lunches
Lentil, courgette, leek and miso soup X2
Chicken, leek and red bean soup X2
Leek and blue cheese frittata X3
Main meals
Turkey, courgette and lentil curry
with cauliflower couscous X2
Turkey, stuffing, brussel sprouts, gravy X2
Turkey stir fry (brussel sprouts, leeks, turkey, cauliflower rice) X2
Thai red curried vegetables (Brussel sprouts, peppers, aubergines and courgettes) with almond and millet flatbread X2
Whatever else happens this week I will eat well

A year ago I began this diary.
Back then I thought I had debts of £23,000 plus. In fact they were upwards of £25,000. I have since paid £12,000 of debt off.
Back then I had a mortgage and now I live mortgage free
Back then I thought I could not survive without spending on my card but a few months later I cut it up and stopped using money that did not belong to me.
Back then I thought road kill was an extreme meat eaters way of saving money on shopping bills.
Back then I wondered whether I could hack full-time work after so long of working part-time (I could and I do!)
Back then I found NSDs scary, they left me feeling poverty stricken and gloomy. Now, I find them renewing and motivating
Back then I thought I had plenty of time to repay the debt. Now I see the debt as a burden that limits my future opportunities and potential and I want to be free as soon as possible.
Back then I bought myself countless ‘treats’ on credit to dull the pain of the mess I was in.
That was then and this is now. I am so thankful for now.

There are days when money just slips away despite my best interests.
So, today I took in lunch but a colleague wanted to go for lunch and we rarely work together. We went to Pret. I got the cheapest thing on the menu, soup and a bag of crisps £5.
Fares to get to work £6.00
Fares to get to the Post Office after work (missed closing time by 5 minutes) £2.20 :eek:
Posted a letter to Oz £2.25
Nut milk on offer in Waitrose, a paper, some bacon =£7.75
It feels like it costs me money every time I leave the house
£23.20 in one day :eek::eek:
I am planning NSDs this on Tuesday, Wednesday and Thursday at the very least this coming week!
It’s been a hard week work wise so I’m not going to beat myself up, but if I was marking my own report card I would write MUST DO BETTER
