Quiz night tonight but made pasta bake from stores to eat before we go, which saves buying food at the pub this month. It's been a speedy month with insurance due so trying to be sensible. There should be enough leftover supper for me to take to work for lunch tomorrow.
Minimised some fabric stash at the weekend by making a costume for my friend's little girl for her class play, my friend tidied my kitchen in exchange...I definitely benefited there!

some people expressed an interest in Wheat free recipes when I said I had ordered rice flour and gram flour off Amazin. I have received both and decided to try a recipe with the rice flour today.
I sort of remembered a recipe off food network about Korean 'Crabstick cakes'. a search didn't bring up the recipe from the series so I tried to remember it and re-create it.
I tried it and the results were 'quite nice'. it lacked something though and I think if I did it again I would use real crabmeat or something quite strongly flavoured like tuna or tinned red salmon. but it is a really easy recipe and almost 12 hours later my tummy hasn't objected!
so here is Meri's Seafood Cakes using Rice flour
I didn't measure anything so its all approximate quantities ok?
about3 - 4 tablespoons of Rice flour
good pinch of salt and same of white pepper
4 'seafood sticks'
2 spring onions
water to mix
a little oil for frying
this makes about 5 or 6 little cakes
make a batter with the rice flour, salt pepper and water - about the same consistency as for ordinary pancakes
cut up into small chunks your seafood sticks or whatever you decide to use.
snip your spring onions into small slices
combine all ingredients
put a little oil into a frying pan and over a low to medium heat fry tablespoons of the mix until golden brown each side. about 3 to 5 minutes a side.

I've been back on the wagon the last couple of days:
Mend: Yesterday with the intention of taking it in for dry cleaning (then I looked at the weather forecast), I mended the hole in my coat which had appeared along a seam. There's still a button to be replaced (will have to see if I have one I can make do with from button pot!), but it's progress.
Make do: Finished up the carrot and lentil soup for lunch yesterday - it was 5 days old and normally I'd have probably left it, concerned it might be past it (and then left it until it was actually mouldy before I did anything about it knowing me!).
Minimised: Today I've finally got shot of the ink cartridges and taken the old clothes round for recycling. Also put into commission a kilner jar which had never been used, as a bag of flour had split.
Two loads of washing drying (dry?) on the line, so have minimised the washing pile too - I love warm sunny days for getting washing done!Mortgage free 16/06/2023! £132,500 cleared in 11 years, 3 months and 7 days

Beautiful sunny day here to day - really lifts your spirits and makes you want to get on with things!
DGD wanted me to alter a dress for her so I walked up to the Hospice craft shop to get some bright orange thread (50p) which will be going back now if finished it. Shortened a pair of shorts for DH to take on our hols.
Made 2 Chicken and Mushroom pies, and an apple turnover with apple lurking in the fridge. Finally made the lemon drizzle with the elderly lemons.
Bed stripped and washing on the line, dried, folded for DH to iron ( bless him!)
Lamb steaks for tea with mash from the freezer. DH has been weeding the block work on the drive, mowed the lawn and done some repair work to the timbers over our patio. He couldn't do too much 'cos we've birds nesting in the honeysuckle thats scrambeld over the top.
All in all a very satisfactory day - do hope everyone else has achieved what they wanted too.Small victories - sometimes they are all you can hope for but sometimes they are all you need - be kinder than necessary, for everyone you meet is fighting some kind of battle0 -

Sorry I've not been around but our little business is beginning to take off! Yesterday one of you lovely ladies came from Leeds to look round - it was great to meet you and your husband, Marie.
I'm off to Italy for 3 weeks today (not as grand as it sounds - I'm staying with an old school friend). I promise loads of summer recipes when I get back. And, in case anyone is remotely interested, the romance is still going strong.

Just been an collected an 99p eBay wonder as my DD calls them, bargain it was too just like new baby bouncer chair. I've googled it and it was £34.95 new price, so when the baby comes I'm more or less prepared at our house.
Well I was in the next village and decided to go to the next one where they have shops aldi and heron foods. Heron has Duerr's blackcurrant jam at 39p a jar so I got 4 we started the last HM damson jam I made last year. I I'll make more this year and not give as much away that's where I've gone wrong this year and having to buy. Because I get sugar at 39p kilo from FF so that's the cheapest jam and tastes fantastic OH tells me. Heron also had raspberry too if anyone has a store near by. They also had bacon misshapes Direct brand 907g for £1 or 2 for £1.49 you've guessed it I got 2 lol. The large pieces which there's a lot will be gammon and chips, the small ones will be used in pasta dishes or quiche or sliced thinner and fried for sarnies.
