Just spoken to boss as work is crazy busy. He said I can have some more hours and even do them from home! Bit of a result, not sure will be on full pay though.

Oooh would you be able to put the recipe on here? Desperate for the book but will have to wait until my birthday!
  • 500g potatoes (she uses tinned, but I use anything I have including sweet potatoes)
    A handful of fresh parsley
    1 egg, beaten
100g flour plus extra for kneading

Boil and mash potatoes, stir in egg and finely chopped parsley and mix well to combine.
Add the flour and work into the mashed potato to form a thick, floury mixture.
Tip the mixture onto a floured surface and work it with your hands for a few minutes to create a soft dough.
Take a handful of the dough and roll it into a long, thin sausage about 2.5cm thick. Cut this sausage into pieces, also about 2.5 cm long. Repeat with the rest of the dough.
Bring a pan of water to the boil. Lower the gnocchi in a few at a time and remove with a slotted spoon when they rise to the surface.

    Easy peasy, and yummy.
