These are really easy and it's a very forgiving dough to work with so great for kids. You could use a few drops of vanilla essence instead of the lemon.

    Jif lemon cookies
    (from the jif lemon cookbook)

4 oz 100g) butter or margarine
    3 oz (75g) caster sugar
    1 egg
1 tsp lemon juice (could substitute with vanilla essence but less needed)
    8 oz plain flour

Cream the butter/margarine and sugar. Beat in the egg with the lemon juice. Fold in the flour and form into a soft dough. Roll out the dough on a floured board and cut into biscuit shapes. bake for 10 - 15 mins at 375F/190C/Gas mark 5. Leave until cold and then ice and decorate.

I have just made up a double batch and got loads of Christmas cookie shapes from it! Just have to go ice them now.

Do you have Home Bargains near you? They have brand name crisps very cheap - McCoys 9 for 99p, Walkers Tomato 10p, etc.
Nevermind the dog, beware of the kids!
  • I definitely agree with Twink's Hob Nobs or how about some shortbread
