    I'm after some homemade biscuit help please.

    For the last month I've been making twinks hobnob biscuits for the family. I'm getting ready for a change. I wondered if anyone could recommend other (easy) biscuit recipes please?

  • If you have a lot of ground almonds hanging about not doing much you could try making macaroons. They're really very easy to make:
    1.Beat 1 whole egg and one yolk (so 1 white, 2 yolks!) until it's smooth. You don't have to beat it until it's frothy or anything, not like meringues! I didn't even use a beater on mine, I just whisked it up.
    2.Add vanilla essence or any other flavourings you like.
    3.Add icing sugar until you get a texture like thick fondant (think the inside of a cadbury's creme egg). This requires a LOT of icing sugar - 3-5 cups.
    4. Add ground almonds until it forms a thick, stiff paste. I used 2x 300g bags but it wasn't quite enough. It should be thick enough to roll into little balls in your hands.
    5.Roll into little balls and squish slightly onto a baking tray lined with greaseproof paper. Bake for 10mins or so (until very light golden brown) at 190 degrees C. Once they've cooled down and set properly they should be crispy with a bit of a chewy texture. Yum!

    I got this recipe from a Moroccan cook book, it's the simplest I've seen so far.
