  • I tried the Lakeland ones last year when they were on special offer, not very nice, use it only in cooking, e.g. marmalade cake, you can count the pieces of peel in the supposedly thick cut style one (about ten pieces per jar!).

    Lemon curd cake is lovely. Since finding the recipe a week ago I have now made two.

    I also have a tin of Mamade, which has been at the back of a cupboard for years, so I am going to make some marmalade.

    I used a can he other day and made loads of marmalade i also added lemon zest.
    In the last few weeks ive also made mixed berry jam from cheapo frozen mixed berrys and blackberry jam!

    Never made jam before in my life its so easy wish i had been doing it years ago!
  • My mom usually buys half a dozen tins of this stuff when it's on offer. Lakeland usually have it, but it's expensive there, and the Strawberry version gets bad reviews. The Lemon and Orange varieties are always good, though.

    Re lower sugar and setting, apparently, there's a specific type of pectin that doesn't need sugar to set. I think it's called low methoxyl pectin. Apparently, it uses the calcium in the fruit to bind to, so adding lemon juice helps it set. I've no idea where to buy it from though.

    According to legend, crab apple peels that have been boiled up will give you pectin. See here. Seems about as easy as making jam - put stuff in a pot, boil and drain.

    I like windfall marmalade (from the hairy bikers mums know best), it has apple in it too, I guess you could add apple to this?
