    last time i made jam i was still at school and it was a right faff. i love marmalade and am dying to go and buy some ma made a couple of questions though
    do you have to use jam sugar
    how do you seal the jars and then store them
    how long does it store for

    no, just the normal cheapo sugar,
    I wash the jars and lids well, then pop them in a very low oven for a bit to sterilise, then fill them (I made a makeshift funnell, which helped in not getting the jar rims sticky, a proper funnel with a widish spouty bit would be excellent) then pop the lids on when its hot.
    Anguk - I would love to know too, as my dad is diabetic - I think it might need extra pestin or comething to get a good set - perhaps Jam sugar, but in smaller quantities? If anyone knows a recipe for reduuced sugar marmalade it would be worth trying with ma made!
  • anguk - Ive just emailed Hartleys, who make ma-made, to ask them if they have a reduced sugar recipe that can be made with ma-made - I will let ya know if they reply!

  • ok, well hartleys have replied, they say:

    "Unfortunately we do not recommend making Mamade with sweeteners or less
    sugar as it is the sugar which causes the Mamade to set."

    I still think it would work with an alternative sweetener and a setting agent, but not sue of the quantities. I may experiement at some point!!

    As for keeping, well I made some in about october and put it in the cupboard and its still fine, so I tink it would last a good long time if well sealed. Also, if you are concerned you won't get through it all, it makes nice gifts, especially if you put it in a pretty jar!

    I made lots at christmas with a splosh of cheapo whisky in, and a spoonful of black treacle to make it more like a dark/luxury dundee style marmalade. I cut some squares of gingham and covered the lids with it (secured with some silver elastic cord from the local haberdashery shop), and hand wrote some little labels, and gave it out as gifts, and it was very well received by friends and family!

    I want to make some Ma Made marmalade this weekend while my mum visits (she used to make it years ago) but don't have any jars saved. Does anyone know where I can buy cheap jars from?

    Lakeland sells 12x 1lb jars for £8.49p, but Tesco's 'everyday value' lemon curd is 22p so 12 jars would cost £2.64 - you will have to ditch the contents though.

    if the lemon curd is not available, the next cheapest 1 lb jar is the strawberry flavour jam at 29p - still cheaper than Lakeland.

    You could ask on your local Freecycle or Freegle if anyone has any lurking around their house? I know a lot of people do store them "just in case" they need to make something. :)
  • :) What a blast from the past - no idea that this was still on sale.

    My holiday job 40-odd years ago was working in a cannery on one of the machines that processed the Seville oranges for "Springs" Ma Made :)

    My first job was hand feeding individual oranges into a fearsome prehistoric crusher - looking back, has made me realise that it wasn't very safe - no machine guards or safety precautions, just had to be quick and keep your wits about you!

    The cannery was taken over in later years and eventually closed down but great to hear that Ma Made is still around

    I always use this and would never go back to all the fuss and flap of preparing the oranges now, it tastes as good
    and can work out cheaper. Plus I have never had a failure with this.
