Well my pitta this morning turned into a roll. What I thought was pittas in the freezer turned out to be mini naan breads but not to worry it was still good. I am going to make leek and mushroom soup for tomorrow and take a ciabatta roll I got at Tesc* tonight (YS of course
) so I am up to #9.:)

Good evening lunch club
Day 6 for me today, a simple but tasty cheddar & cucumber sandwich.
I've got the rest of the week planned out already, so hopefully I can stick to it and reach 5/5 again:
Tomorrow - hummus, falafel and salad
Weds - leftover chilli & rice from tomorrow's dinner
Thu - leftover quinoa salad from Weds' dinner
Fri - soup & sandwich

Not difficult at all. I just dice some onion and garlic, put it in the food processor with a tin of chickpeas, ground cumin, fresh parsley and coriander, lemon juice and whatever else takes my fancy.
Process for about a minute, roll into balls and bake for 10 mins in the oven
I like it home made because i can adjust the spices to suit me.
I make a lot of hummus too, literally takes seconds in the food processor. You wont buy shop bought again once you make it from scratch, and its so much cheaper too.
Just chickpeas, lemon juice, olive oil, garlic. Process until smooth.0 -
4/12 for me....just concocted a rice noodle and vegetable dish which will do nicely for today and tomorrow's lunch.

Oh dear, didn't do too well on my first day back to work so I'm claiming half a day! I didn't bring enough food and was so hungry!
