Not officially declaring any spending for this month as it is manic at the moment (new job) but still need to watch the pennies until first pay check at end of the month. Found these two recipes to try this week on cheapest recipes thread

    Roasted Carrot Hummus
Very filling, based on recipe of Yotam Ottolengi, his uses roasted red peppers.

Loads of carrots yellow ticketed ones work well
    2 onions
    Garlic
    Soy sauce
    Tahini paste
    Chili jam
    Coriander or parsley
    1. Slice and roast as many carrots as you can get into your oven
    2. Heat oven to 200 C
    3. Slice onions and garlic
    4. Toss in sunflower oil
    5. Roast for 40 minutes or until carrots are slightly charred
    6. Blend with fresh coriander or parsley, soy sauce, chili jam and more fresh garlic. I have also added tahini paste.
    7. Serve as a dip with bread and salad or as a hot dish works well with quiche or roast meals. Can also be used as a sandwich filler.

As a good mid to end of week meal, using up stuff this is brilliant, cheap and quick.

Boil spuds with any other leftover/limp root veg, eg carrots/swede/parsnips - bung in some greenery, maybe the half cabbage or a few sprouts. cook until soft but not soggy.

Heat oil in a deep baking tray in the oven, 160C should do, with a chopped onion or two.

When the above spuds and veg are soft, don't mash but slice/chop through with a knife - sort of half mashed.

Bung into the pre-heated baking tray up the temp to 180C (fan oven). Season with
    black pepper if you like.

Arrange slices of bacon (smoked bacon works well) on top, and cook for 20 - 30m.

For the Piècede resistance - make a dent with a ladle in each quarter, and crack an egg into the hollow.

Grate the hard lumps of cheese at the back of the fridge you've saved, but don't really know what to do with, over the surface and cook for a further 5 mins or until eggs are set to your liking.

Vegetarians = avoid the bacon - still blummin' tasty!

Hi everyone, I haven't done very well at budgetting the food money this month. I have £30.77 to last us with not much in the house at all.
But I am proud in one sense as instead of buying roast potatoes and yorkshires I am making them from scratch. I am cooking a chicken in the slow cooker so we have meat for 3 days and we managed to get bread reduced to 2p. We do all like something sweet so am making a bread and butter pudding for afters as a treat. I think our menu is going to get quite adventurous!
Everything is always better after a cup of tea
  • Update for my spending.
OH came back from camping on Sunday night, which meant that we went for a weekly shop at the supermarket. We spent £32.03 about average for us, but we did get some good reduced bargains for OH lunches next week. This also means that hopefully we do not need to go and get stuff other than drinks.
    Total spend this month: £64.97
    Left: £85.03

    Hiya everyone :hello:

    Managed another NSD today.

We had a strange - have what you fancy - meal as DH was held up and so we ate separately. I had tinned sardine salad, crackers with stilton and a conference pear. DH had a huge bowl of HM tomato & veggie soup with a cheese roll then chocolate pudding and custard. Made a change though :rotfl:

Hope you all have a wonderful Wednesday

Tenth Anniversary Combo Breaker Car Insurance Carver! Debt-free and Proud!
Mr T delivered yesterday £110. The joys of having a birthday feed, silage (12)men to feed and visitors coming tomorrow. Normally £25.

Have got lots of salad stuff, lots of bread, cream, cheese, and generally expensive stuff. Strawberries are meant to be in season?

So not a total disaster, as long as I have no waste and everyone has a full belly, all is good.

    Did birthday feed yesterday.
    Silage today.
4 Young uni people to feed from tomorrow on for 3 days.

should be fine and was another NSD today.

May need milk again before I am done.

    Maria
