    Sounds like you're doing very well with the budget, well done. With regards to your husband finding a job, does he have any hobbies / skills that he can make money from? Alternatively, anything he'd like to try?

    Lemon Muffins

    Ingredients:
    1 lemon
    250g Sr flour
    1 tsp bicarbonate of soda
    150g caster sugar
    90 ml sunflower oil
    150g low fat lemon yoghurt (I used low fat natural yoghurt)
    2 eggs
    Icing sugar (for sifting on top)

    - heat oven 190C (fan oven 170C), 375F,gas mark 5
    - put muffin cases in tin (12)
    - grate zest of lemon
    - sift flour and bicarbonate of soda in large mixing bowl and stir in caster sugar
    - measure oil into a jug, add yoghurt and the zest. Cut the lemon in half and squeeze the juice from one half into the jug
    - beat eggs in separate bowl then add to oil mixture in jug. Use a metal spoon to mix until well blended
    - pour oil mixture into the bowl with dry ingredients. Gently mix everything together.... don't over mix
    - spoon mixture into the cases
    - bake for 15-18 minutes, until they are golden and firm to touch
    - leave muffins in tin for 5 mins then lift onto wire rack
    - sift icing sugar on top

    Not really tbh, he's just going to have a look and see what comes up. I'm sure he'll get something, he knows what our money situation is... just a bit daunting I suppose as he's not worked in such a long time

    is there anything he can do to build up his skills, my mum hadn't worked for 12 years, and did a skills for work thing, got straight into work..

    Hi-I was just about to start my own diary but thought I'd read a few for encouragement and inspiration. You sound like me-I use my credit cards to make me 'feel better' with a treat-and then I end up with loads of debt! You sound like you have made a great start-2015 is the year that you can beat your debt.

    Total was 11066.29 now £10,968.15

    Evening all!
    Feel like I've had a very frugal day! I made a turkey stew for tea and a toffee apple cake with some wrinkled apples, also froze some yogurt drops for the kids!
    Back to work tomorrow though:(

    Does sound frugal... :D how'd you make the toffee apple cake? I have a few apples that are a bit past it so was trying to think of how I can use them up.

    I am hoping this is the year... fingers crossed the diary and the folks on here keep me motivated :D

  • So first day back to work today, boooo!

    Suppose I need to get back into a proper routine at some point though :o

    So fairly frugal today:

    - porridge to work for breakfast
    - hm soup for lunch
    - snacks all from home
    - dinner per meal planner
    - small spend as I needed milk (for home) but that's all I bought
    - short walk at lunchtime

    Didn't go swimming as planned as felt soooo tired all day, so I'm still going to try and get to the pool at least once this week.
