    I've made 2 mincemeat & marzipan loaf cakes to use up marzipan that was in freezer, one of the 4 large jars mincemeat in the cupboard and the remains of a bag of muscavado sugar, house smells yum at the minute,

    Would you post the recipe please? This sounds lovely,
    I love marzipan, which I didn't realise could be frozen. :T

    I love marzipan, which I didn't realise could be frozen. :T

    I didn't know if freezing marzipan would work but thought what the hell, only one way to find out. I just left it to defrost in the fridge overnight and when I tried a bit it tasted fine, texture didn't change either.

    This is my cheat version using food processor!

    200g SR flour
    100g cold butter cubed
    85g light muscavado sugar
    85g marzipan cubed
    2 eggs
    300g mincemeat
    2 tbsp flaked almonds (optional)

    Preheat oven to 180 or gas mark 4
    Blitz flour, butter, sugar and marzipan in processor until looks like fine breadcrumbs
    In another bowl whisk eggs lightly then add mincemeat and stir. Add the flour mix to the wet mix and stir until evenly combined.
    Tip the mixture into a 2lb loaf tin and top with almonds and cook for about 1 hour before checking with a skewer to see if cooked.

    I don't always stick to the ingredients exactly, for instance this time I didn't have enough marzipan for 2 cakes so I just divided what I had and added a few drops almond extract to make up for the taste. I've also added more mincemeat and switched the sugar to Demerara. Only difference was it took slighter longer to cook as the batter was a bit wetter than normal.

    The true recipe says you should leave marzipan in small cubes but my first attempt didn't cook properly so now just blitz it with the flour and butter. But it's up to you which way you do it.

    I love marzipan and sometimes look longingly at those fancy marzipan strawberry and apple shaped and coloured fruits sold in expensive confectionery shops. But if you buy a block of it from the supermarket, cut off a small piece and shut your eyes the satisfaction effect is exactly the same at a fraction of the price !

    I forgot my breakfast today and I'm starving :( I do have my lunch with me though! Half 12 can't come quickly enough - coke fills your belly for so long, but I need food :o

    Ha ha hope you managed to make it till lunch time!

    I was doing the same mantra on the way home on the bus, you know when you've planned your tea but the closer it gets to that time of day the less you fancy it? well I was having one of those moments!

    However, I was very good and stayed on the bus when we got to the shops, I've come home, made the cauliflower cheese I had planned ( added some tinned potatoes that needed using up) and thoroughly enjoyed it lol :rotfl:

    Hi Chums,I have been working in the charity shop today,didn't buy anything.Did get some reduced bread from the co op next door though.

    I had a phone call this afternoon with a date to have my gall bladder removed.2 weeks.yikes.There have been times when I have been tempted to have a go myself.I have been waiting years for this.Brilliant.

    Mr V's bank account has been hacked and he is spending hundreds with gay abandon in Talin and the US.The bank are on it but he has no usable account for a few days so haven't worked out how much we have saved this month by not buying it.

    As predicted wall paper striping is slow.

    Off to the theatre tomorrow night to see a thriller-press night so a freebee.

    I know that feeling very well indeed! :rotfl:

    We had a beef noodle stir fry, total came to about £1.70 for the stir fry and £2.50 for the beef to feed four people. I am allowing myself into m&s at lunch time for their reductions. Let's me 'buy' stuff but still indulge myself :rotfl:

    I also bought a bag of ww cookies in super drug for £1.20 for 5 bags. It's actually a good price. Plus I was quite hungry :o
  • Partook of the free ice cream at ben and jerrys yesterday, a lovely treat before work :)

    Will be spending money today but not sure how much yet, so will update when I know. Also been working on christmas presents (I know its early but the sooner im done the sooner i dont have to worry anymore!)

    Have to agree with you emslovesmickey over home made Christmas presents. I have three made so far. Two are made from left over wool as I had over 300gms of wool left in two colours from making cardigans.

    Last year it took me about 5 months to make 12 scarves. I should have made 1 more but I ran out of time. There is no way you can make that many scarves one after the other it gets so boring. Much better to have them done early than run out of time.

    Home from my 'posh' afternoon tea with DD at an hotel.very nice, if vastly overpriced though.Did bring home the uneaten slice of carrot cake and will have that later on this evening.:):):)
    DD bought me three tops and two pairs of trousers as she wanted to 'treat' me.So holiday wardrobe sorted combined with stuff from last year:) no more to buy clothing-wise this year :):):)Bless her I had to persuade her that dressing up, and smart clothes are a bit daft for me as I look after my DGS for most of the week so rarely go anywhere 'smart' to wear them Far more practical to have some summer tops instead:)
