Try flight and hotel deals at ba.com expedia.co.uk and perhaps call trailfinders

No such thing as cheap hotels in HK as they are some of the most expensive in the world. It's also a long way to go for 3-4 days. I was there last month and paid over £100 a night for a small box room.

I'd check out flight+hotel deal through the airlines as that will probably be cheaper than booking separately. Your choices depend on whether you want to fly direct from London or are happy with an a connection in Europe or the Middle East. If you are in the north of England or Scotland then Emirates via Dubai is a good option.

Those dates are over Chinese New Year in 2015. HK will be completely full, primarily with mainland Chinese, and cheap hotel deals will not be easy to come by. On the other hand, if you can find something in your price range, it will be a good time to be there. Book ASAP, there are unlikely to be many last minute cheap hotels...

If on a budget, relatively cheap rooms are available within Mirador Mansion or Chungking Mansions..

I've been twice, once for a week and the other for a couple of days and then flew on to Bali. Both times I've only been out of UK for a week and both times it was Chinese New Year (February half term). It was either go for a short break or not go at all as that was all the leave time I had.

Can't make current recommendations but I did a package both times. I didn't find it 'most expensive in the world'. I'm making comparisons with UK hotels, especially London.:(

Since you are in edinburgh, don't bother direct flight for london. Emirates is nice, but it is something 6 -7 hrs each leg which I personally can't get enough sleep when compare to flight stop over europe.

BTW, you notice it is at least 15hrs -16hrs flight if it is indirect flight, and there is 8 hrs different. So you are actually spending 3 days in HK & Macau...

I'd hoped to do that too but all the ferries were absolutely heaving with people trying to get home for the holidays.

I suppose it depends on how good you are at sleeping on long haul flights. If you are able to have a good kip then flying via London, Amsterdam or Frankfurt makes sense. If not then Dubai offers the opportunity to stretch your legs at the halfway point at the cost of a longer overall journey.

Doing HK and Macau in 3 days might be pushing the schedule too far.

Yup, the ferry tickets to Macau will most likely be sold out as the locals tend to leave HK for a short break during CNY.
