    was going to make one but the yogurt has the 18ths date on .....it smells and looks ok so will it be ok to use

    If it look okay, smells okay, I would have a taste and if you think its okay then use it.
    I often use things past their date as these are only a rough guide line.

    I would say if you did use it and make it today, I would not keep any leftovers for tomorrow. Thats just me.

    I had a recipe years ago ( from a womans magazine ie Womens Weekly) for a White Chocolate and Raspberyy Cheesecake.

    It was really straight forward to make and did not involve any baking at all. It was a digestive biscuit base, and used philly cream and white chocolate too.

    Does anyone out there have a similar recipe i could try - I have searched the recipe forum but cant see anything similar. Quite keen to try for the sunday dinner.

    I think I know the one you mean!!

    I've always made it with a Bourbon biscuit base and butter - for that real chocolate hit! However, you can make it with digestives.

    So thats the base sorted.

    Next the filling. Melt some white chocolate - I use one of the standard bars (think they are about 150 - 200g). Meanwhile mix two tubs of philly/soft cheese until it is smooth. Add the melted white chocolate to it - I reserve some for the top. Mix until mixed! Then add this to the cheesecake base. When cold, rewarm the white chocolate (if using on top), add raspberries round the edge and then drizzle with the white chocolate before returning to the fridge to set.

    Yummy - only pleased I've already made an apple pie for today, or else I'd be off to make this now!!!

    this is very similar to one i made yesterday, except i added 2 oz of butter and half a teaspoon of vanilla extract to the melted chocoalate, and 2 oz of caster suger to the cheese mix, with 250 gram of double cream, mixed it all together, then folded in raspberries!! was yummy!!

    Also - what quantity of butter/ digestive biscuits do you use? and what kind of cake tin?

    thanks - I am really trying with home baking but worry it will go wrong!!

    I think I read on one of the other threads someone used Nigell's quick chocolate mousse (made with Marshmallows) as a cheesecake filling
