    I am looking for a good cheesecake recipe have been scouring the internet but can't seem to find one that sounds good, not that bothered about it being cheap because I have been duped into having dinner at my new house for all my family tomorrow it does need to be very good as they like to criticise your help is much appreciated

    Is delicious and easy! Never have any left when make for family/friends so can't say better than that!

    Baked Lemon Cheesecake


    Ingredients
    Base:
    8 oz (250g) digestive biscuits, crushed
    4 oz (125g) butter/margarine melted
    4 oz (125g) sugar

    Filling:
    1 lb 4 oz cream cheese and/or curd cheese
    2 lemons zest and juice
    2 eggs
    2 oz raisins
    3 oz sugar
    ¼ pt double cream (or milk)


    Method

    1. Preheat oven to 160°C/ Gas Mark 4
    2. In large bowl mix together crushed biscuits, melted butter and sugar and spread onto base of tin (line base with baking parchment for easier removal & serving)
    3. In another bowl, place cream cheese and beat until smooth.
    4. Add the cream, eggs and sugar and whisk.
    5. Pour in lemon juice, zest and raisins and mix well.
    6. Pour onto biscuit base, level and bake in oven for 35 – 40 mins or until feels set. Can finish off with thin layer of soured cream on top if liked - take out 5 mins early and then pour over soured cream to give a layer of about a 1/5 cm depth, then return to oven for 5 mins to set. This bit is optional
    7. Chill, preferably overnight to allow flavour to develop.
    8. Enjoy!

    While working (on the checkout!) this am a lady gave me a recipe for a lemon cheesecake (without cheese!), I can remember most of the ingredients and have just made biscuit base but dont know whether you have to bake it or not - does anyone know? I thought you just chill the base but I'm sure the lady said to bake it. Its just digestive biscuit and butter.

    Just make sure it's pressed down well in the tin and put it in the fridge for at least an hour, preferably more. No need to bake it.

    How about melting the jelly in the microwave, whisking the evap until its full of air bubbles then pour the melted jelly into the evap and continue to whisk until its all 'mixed in'. Put in the fridge to set - we call this 'pink fluff' and the kids love it!. I guess you could put it on a biscuit base for the cheesecake effect, but if you only have the jelly and evap the 'fluff' is a good cheap pudding.
