I have bought 2 bags of red onions in my shopping by mistake. I only use them on salads and sometimes roast them but what else can I do with them to use them up?
With normal onions I would make soup but can't imagine red onion soup somehow.

I would be careful how you use them as they are supposed to have a "viagra" type effect on men!!!!!!!!!!!!! Seriously, just use them as you would white onions - you wont notice the difference - except in the bedroom!!!0

Slice them up, fry them in olive oil. When they are cooked nicely, chuck in some sugar to caramelise them and then some balsamic vinegar. Cook it all down gently and they are lovely.

Use MrCow's recipe to make a tart. Roll out puff pastry til about 1cm thick, Cut into oblongs and score a border about 1-1.5cm from edge. Put Mr. Cow's onion stuff in the middle, crumble on goats cheese, glaze pastry edges, bake. Looks fancy, takes 10 mins to prepare.

Onions freeze well. Just slice/chop them and freeze until you need them. I like them roasted with peppers and sweet potato etc, and I use them in any tomato based recipe.0

Oooo yes....it's lovely in quiche!

Also balsamic vinegar I have some but can it go off? I can't see a use by date but I've had it ages and its opened?

I thought balsamic was too acidic to go off. Have a smell and if it smells OK have a taste. If it tastes OK then it probably is (I've never had food poisoning yet!)
