Come on now get it right - its onwards and downwardsMay not be any use especially for a batch cook, but the only thing I cook in that vein (with quorn fillets) is just the fillets in a veg sauce which is really nice. I guess you'd need to at least part cook the chicken first?! [Veggie for over 25 years and have no idea how to prep meat anymore!]
Just finely chop whatever veg you have, onions, carrots, leeks, peppers, mushrooms, those kinds of things work really well. Season with whatever you like and add a tin of tomatoes or passata to make it a bit more saucy. Then bake it all in the oven. Makes the fillets/meat really juicy and flavourful. My parents often do this with cuts of pork or chicken so it does work.
Hmmm, am I showing not only my lack of knowledge with meat but also that I don't really use recipes? :rotfl:
Thanks Crabapple. I was asking for DS. He has bought a load of lovely chicken breasts with a view to doing some meals for the freezer in an attempt at trying to eat healthier. Your recipe sounds fab as he could swap the quorn for chicken and leave out the peppers (he doesn't realise how many peppers he eats in our meals that have been blitzed down - what the eye doesn't see and all that. His confidence in the kitchen is improving - he usually cooks lunch for him and his gf when he stays over. I told him to start of with just a basic broth.

My 2 favourite batch cooks using chicken breast are curry and sweet and sour. Its so easy as the breast is just cooked with onion with frylight, you can add other veg if liked and mixed with sauce.
I sometimes do a batch of rice as well but lately just cook a pouch

I'm currently roasting a ton of vegetables to have with my quiche later and cous cous tomorrow. I've always eaten a fair bit of fruit and veg but I can't believe how much I'm getting through on sw!
Blue eyed girl, what about the diet coke chicken for your ds's chicken breasts? I'm yet to try it but know a lot of people who love it.
I'm struggling a bit with ideas for work lunches that aren't cous cous/pasta or quiche based. I work 4 days a week and batch cook casseroles and stews each week for dinners but am struggling a bit with ideas for lunch. Before sw I'd have a mugshot, fruit and a packet of flavoured raisins but I'm not wasting 3.5 syns on them!0 -
Do you have a microwave at work caroline? I just take leftovers from dinners, or make quinoa salad. I'm convinced that whatever happens with SW it shows up in the end although not always immediately. Any of the dishes (sweet/sour, curry, chicken in veg sauce) could then be pinged/heated on hob in the time it takes DS to do potatoes or pasta or rice to go with them. I'd put plenty of veg in the basic meal so that he doesn't need to bother doing side dishes. I always put onions, peppers, mushrooms and sometimes spinach in curry. In SW he could have pineapple, mushrooms, onions and maybe more of the peppers he doesn't eat;). As the weather changes what about HM soup? If you haven't any facilities you could take it in a flask. You could make frittata/crustless quiche to go with it.
A bit of an off plan day here. Breakfast (scrambled eggs on HEB). I've got LO savoury rice (HM with veg) for lunch. Dinner time I'm out at a carvery so syns will be involved but can think of worse meals out.0 -

Ooohhh I just love roast veggies - nom nomWe love diet cola chicken (that is me and DH) but DS doesn't to sweet in savoury dishes - he's not fussy mind you
. Someone at class last night had used Diet Irn Bru for the chicken instead and said it was lovely. I think any diet pop would work if you don't mind the sweetness.
Sorry for being lazy but I shouldn't really be on here atm but can I ask which of the pouch rices are free ?. DH wouldn't dream of buying them usually but I always say there is a time and a place for convenience. It might also speed up the cooking as DS still has his L plates on in the kitchen. If we offer to help it is seen as interference. :eek: I was going to prep him a few veggies for when he starts later today but I don't think its worth the grief. :rotfl:
Well its back to the grindstone for me. I always say that I don't do BM - but I suppose I could class housework (especially when I put a bit more effort in) as BM - what do you all think?

Picked up a 400g Hovis wheatgerm instead of wholemeal. Can anyone say if it can be counted as HEB or what the syns would be please. Ta muchly. :-)Start weight 13st10 (on 06/07/14) - 1st Goal 11st9 (by 14/12/14 - 23 weeks)

You can still have the mugshot and fruit, but add some salad veg instead of the raisins - job done!0
