all your pains and aches sound just like general body inflammation which too much refined carbs, screwed up sleep patterns and lack of minerals/vitamins and other micronutrients help maintain.

Yesterday I counted, I had
1614 calories
65.5g protein
183.3g carbs
66g fat
19.5g fibre
So far today had 2 spready cheese and jalapeño sandwiches
Dinner will be sole with salad and salad dressing
Not sure on tea yet0 -

Another thought but, on the days you do watch what you eat, are you eating enough?
I read somewhere that, if you don't eat enough, this builds up, and then, your body craves anything and so you will 'overeat' for a while but it is because you haven't always had enough to eat in the preceding days, if that makes much sense??
Another thing I read is that, on average, women will spend 31 years of their lives, dieting. It sounds so simple, losing weight, and yet, so many people struggle because it isn't as simple, it seems.Dear Lord, I am calling upon you today for your divine guidance and help. Can I just say, based on what you have put for your week day menu example, you are still having plenty of carbs.
Although it is good for you, oatmeal porridge is high in carbs.
I can't see where your menu is low carb, unless you just mean you are eating less carbs than you previously were.

I admit at the start I wasn't eating enough some days, I was going to bed hungry cause I wanted to keep my calories low and I do think that's what caused me to have a month off (I still lost weight)
Now I've decided to just eat a little more on the days I'm more hungry and less on the days I'm not so hungry so my calories can be anywhere from 1200-1800 whereas before they were regularly 1200 and some days as little as 10000 -

What is the figure you calculated the last time you worked out your TDEE x the physical activity factor.
I dont know how tall you are and I know you are limited in the exercise you can do, but 1200 cals is still pretty low, if you have days where you do only eat 1200 cals.
Id struggle on that. Its not enough. My advice would be as I said before, try and cut down on the junk food (which you have said you are doing), up what you are eating in veg, couple of pieces of fruit a day. Eat good fats. Swap potatoes for sweet potatoes a couple of times a week, keep a food diary, not just what you are eating but how you are feeling when you eat the food as well, make sure you drink plenty of water.
Also, theres no need to eat by the clock. If lunchtime is generally midday and you dont feel hungry, eat it later on.
I also agree with the person who said that sleep or lack of it can also be a factor in not losing weight.0
