Really wanted tuna risotto today but can't find a recipe that doesn't involve something we don't have, either white wine or onion! :mad:
A recipe is only a basis for cooking a dish you fancy. You can always adapt, leave things out, add extras, and improve them. I wouldn't expect wine in a risotto anyway, just the appropriate stock.
The only time you need to worry about quantities being accurate is when you are baking, as it is more akin to chemistry. Otherwise, use recipes as a guideline.0 -

The seafood risotto was lovely, shame tesco don't have it anymore!
Added green beans, broccoli, onion (found some in the freezer) sweet corn and a tin of tuna to it0 -
