That's fantastic Alex :T it's great fun isn't it ? I feel like having a go at D&DD's apple plait or a quince variation upon it (I never stick to recipes).
I remember watching Jamie Oliver make bread on a worktop and thinking 'why don't you just use a bowl you twit :rolleyes: ?' The whole mountain and crater thing is completely unecessary if you do it in a bowl -just mix it all together with a spoon or your hands, no special techniques required0 -

Also the pizza base thing reminded me of an old TV show maybe Generation Game???? Where they have an expert show contestants a skill and then they have a go??
I was thinking of those Italian pizza chefs that do that spinny thing with the dough and come up with a perfect circular base compared to my comical attempts!0 -

Great minds think alike, Thriftlady. And by the way, I made the apple braid on Friday, but left out the sultanas and added raspberry jam - it is lovely but huge - would make two out of it next time. Oh and I made it with half wholemeal.

*falls over laughing*.. absolutely.. grandpa taught me to do it in a large bowl so i've always done it that way. About the only thing i do on the worktop is kneading and gathering in the last bits of crumb from the bottom of the bowl.
anyway, alex, well done - hope its the first of many loaves of bread that come from your hands!

I believe Jamie Oliver was shown this bread making technique by an Italian chef (Gennaro Contaldo) and why he used it on telly. This is how they used to make bread dough in Italian households and it is the technique my Italian mother still uses every week to make not only bread, but pasta dough! Difference is, she brings out a huge wooden bread board and does the "crater thing" and then puts the board away (after cleaning it!) The bread, pizza and pasta she makes is so light and tasty it is out of this world..... must be all that air that she gets into the flour when she gently swirls the flour into the water ..... bit like sifting the flour I suppose. If I use exactly the same recipe in my breadmachine it just does not taste quite as good..... (and I should know as I make bread/dough every day in my breadmachine) and if I try to make it in a a bowl I find it turns out soooooo much heavier..... wish I could use the above technique, but I know that I just don't have the patience or the skill :rotfl:
