    How about Spanish omlette, curry, chinese stir fry/noodles, pizza, moussaka, pasties, shepherds pie (using beanfeast), baked potatoes?

    All of the above are very simple to make, either chopped veg and a sauce, premade if you don't want to make your own, or beanfeast and layers of potato for mousaka with a sauce, or beanfeast with added peas and sweetcorn and onions under mash for shepherds pie.

    Have you tried the large soya pieces, you can get them flavoured or unflavoured, I buy them from one of those shops with big bins of things that you measure out yourself, or some large Sainsburys used to sell them. They are great for stews/curries etc, as they add a bit of "bite"!

    Oh yes, I'd forgotten about moussaka - one of my favourite meals!

    Haven't seen the large soya pieces (it's a bit of a backwater where I live :(). I must have a look in Holland and Barratt - they'd probably be the most likely place to find them :idea: .

    What about:

    vege kebab - I make this with vege burger, hummus and salad in a wrap or with felafel (off a recipe on this site)

    mexican beans (like chilli con carne just without the meat). You could serve with tacos and tomato, salad.

    We meal plan more now. Bit disorganised since we got back from a week away though.

    As a youngish (26), full-time teacher and with an OH that is also full-time in whatever he does (IT :D), we find meal-planning invaluable. Just look on the fridge and all decisions are made for us. Writing a shopping list takes a couple of minutes, based on what we've got in the cupboards and what is on the meal-plan. Ta-da! Very little brain power used. *and not much money either :D*

    Some sainsburys do soya chunks only small packets for about 50p ish. it takes on the flavour of what ever it is cooked in.

    Only the other night we had spag bog and as husband was feeling lazy we used soya chunks rather than mince. And it was really nice.

  • Meal planning has worked brilliantly here. In the two months since we started we have gone from spending over £400 on grocery shopping/meals at work in a month :eek: (and throwing away loads of stuff that went off :o ) to coming in under a budget of £200.

    And we've been eating much more healthily too - everything made from scratch, leftovers taken in for lunches (don't have a freezer yet!), homemade bread, lots of fruit and veg. Feel much better, have lost more than half a stone and are in credit at the end of the month - with plenty still in the cupboards.

  • Just wanted to say a big thank you. I am one of those who just lurk and read and apply some of the suggestions etc. This month was very tight and so I applied alot of the threads that were posted over the month ie use it up etc. So big thankyou as I have managed to come through this month without going overdrawn and pay my car insurance withput dipping into the savings.
