  • Hi, I make a really nice veggie shepherds pie, don't know how many WW points it would work out too but am sure that its pretty good on the calorie front and tastes delicious.

    Serves 3-4

    2 Large peppers (whichever colours you have/prefer) finely chopped
    2 Large carrots finely chopped
    2 cupfuls dried lentils/pulses etc, pre cooked for around 20mins
    1 Large red onion
    1 tin cherry tomatoes
    1 tin baked beans
    1 tablespoon tomato puree
    1 veggie stock cube
    garlic
    2 dashes of worcestershire sauce
    4 Large potatoes
    dash of butter/low fat spread
    dash of semi skimmed milk

    Sweat the onions in some olive oil with the garlic then add the chopped
    peppers and carrots. Cook for around 5 mins. Then add the tomato puree, stock cube, tin of tomatoes, worcestershire sauce, tin of beans and mixed pulses. Cook gently for around 30mins.
    In the meantime cook the potatoes and mash with small amount of butter and milk.
    Put the veggie ingredients in a shallow dish and top with the mash. Add a tiny amount of low fat grated cheese if desired and cook in the oven on 190c for around 15-20 mins.
    Serve with lots of veggies.

  • Well I signed up for the monthly pass and I have to say its definately worth it for the e-source it does it all for you! Before when i did WW i mainly used convience foods and didn't really do a lot of home cooking. Now i've got children it makes a lot more sense to cook properly. I'm going to do a chicken stirfry tonight receipe from one of my old books i'll let you know how it is!

    I just started WW on Monday this week, doing it online though as I can't get to the meetings. I've got some recipe books and all the other books from the last time I did it lol........

    Anyhow, I find it difficult too to know what to cook too with our little one. She has eating probs and sees a dietician so I have to fatten all of her food up for her and use "full fat" versions of everything to fortify her meals.

    If it was just me and hubby he would eat the same as me.
    I have found making things like spag bol not too bad. I did this the other night, hubby and DD had minced beef in theirs and I used quorn mince. I bought a huge pack of mince and have separated it into portions that are just big enough for spag bols, shep. pie etc for DD and OH and frozen them ready for when needed. I like us to all sit down together too and ideally eat the same thing. The other night I had three pans going, one for me with quorn spag bol and one for DD and OH with the beef and another for the pasta. Apart from the meat/quorn all the other ingredients I used were exactly the same, passata, tom puree, garlic, herbs etc (all free!) I added some grated cheese to the the top of DD's to fatten it up a bit. Oh and I used proper cooking oil for theirs whereas with mine I used frylight.

    Also when I make pasta bakes etc, I have bought some of those brown coloured individual pie dishes (don't know the proper name for them) - got them from wilkos yonks ago for about one pound summat each. Using these I can add extra to DD's meals so we can still all eat the same thing

    e.g. If making a chicken/mush pasta bake ( I use the campbells condensed soup, mushroom flavour 99% fat free), I do them individually in the pie dishes, but to DD's I mix some cream through and add extra cheese to the top so she's not missing out.

    It does take a bit of thinking about and prob some extra washing up lol

  • I have been on WW for the past 9 months and lost just over 2 stone. :A

    It has been costing me a fortune though in WW meals, drinks, lunches etc. I really need to tighten the purse strings and stick to a budget when it comes to food shopping.

    Are there any fellow WW's or dieters on here who have some nice healthy recipes that I can start cooking on a budget. If I find any nice recipes I will also post them on here.:D

    Im not WWing but if you pop over onto the oldstyle weight loss part 3 thread...most of the recipes i post have got the WW points on as i used to be a ww-er... and some of the other folks on there are doing it that way....
    Will be posting some more tomorrow..
