Lasagne!!!!!!!!!!!! Never even occurred to me!
then again if it were down to me lasagne would be pasta sheets interspersed with bechamel sauce and topped with cheese. No meat or tomato based sauces needed :rotfl:

Just thinking a bit more about when HIM moves back, I often make something veggie and then cook a chopped up chicken breast or similar separately and add it to DH's portion. For example, butternut squash and sweet potato curry does both of us but DH likes meat in his too so I add the chicken to his. Or I'll make pasta arribiatta and then add bacon bits or something to his portion. I know it may not seem fair to you, but you could do the same if you are happy with no meat and keep the costs down by only adding meat to his half??

Crikey, they'd be grateful in my house for pork chops, chicken AND spag Bol. EVERY week. We always have some kind of meat on Saturdays but it's really not on the menu during the week very often. Although I always made sure DD had whatever she wanted when she was growing. She loved all kinds of meat, fish etc.
Sausage and mash is always a good one, or a spicy sausage spaghetti. And you can make your own burgers. ( as if you haven't enough to do) :rotfl:
We had quiche with a bit of gammon in it last week - the gammon was the basics from Sainsbugs 2 for £1.50. By the way have I mentioned that I use oats in my chilli? So when I did my lamb spag Bol last week, I tried adding oats. Was delish (as I have proudly reported).
It's hard being so inventive, but I am getting there with it and hopefully we will keep it up when my wage back to normal and then we might be able to start saving again.
Have you tried gloop? Not to eat but to play with. From memory it's just cornflour and water. Put it on a plastic tray and it's a gloop that you can play with. Oh the joys

He does deal with the lack of meat quite well sometimes. But he isn't really INTO it. I made a veggie masala the other day inspired by GP. And he complained of tummy pains etc and a dodgy tum, when I had no issues. We have veggies added to chicken curry to make it go further, so I could definitely do it the other way around! Good idea.
And also, the potato and butternut squash curry sounds lovely! *googles for a recipe* - just found a website called 'allotment-garden.org' and it has some lovely recipes, this one included!Thanks hun!
I will best this meat malarkey! With Jellytot being non-dairy, and fussy, she won't eat lentils, or beans really. So her protein tends to come from fishfingers or ham/sausages. That is about it the last few weeks!

I do actually make a lot of burgers. I tend to go for chilli, mint, or stuffing in my burgers, along with some onion. Lovely dinner!And on the menu this week funnily enough.

My DD became veggie last year and I've become a huge fan of Quo#n. Very meaty and satisfying but cheaper than the real thing. Maybe Him will like.it? I was thinking about the start of your diary the other night. HAve you ever reread it Lilt? Those first pages really grabbed me as you seemed so vulnerable but so strong as well. You are a brilliant role model for Jelly.
Coincidentally my income almost exactly matches yours! I also put the same amount away for future things and find budgeting a real self discipline. I'm getting a lot better at it as the months go by. I have a mortgage and want to pay it off in a decade but it's a big challenge! Even if I don't make it I shall make a dent in it at least.
It's my 48th birthday next Friday by the way! I love even numbers and don't mind getting older! 7 years and three weeks ago I fled with my two children helped by police officers from a husband who had vowed to kill the children, to safety at a traveller site. A long story! We went the next day back to my parents who had never met their granddaughter and started our lives over. None my son is engaged and my daughter has just started her GCSE courses. Life gets better and time only moves forward!!

Lilt - my DH seems to take after Jelly. Fish fingers and ham are his favourites. He managed to 'force down' some chickpeas I made yesterday in a curried soup (packet base - okish but prob wouldn't have it again although friend really liked it).
Fishfingers and beans on toast comes top of his favourites list, regardless of how much time, effort and love I put into anything else
At least it's a frugal meal, lol
