    Thanks WantToBeSE :) I have made caldo verde for my lunch tomorrow and then have a day off on Monday when I can think further about my options for the rest of the week. I might make more caldo verde actually since I have got half a cabbage to use up and have all the other ingredients, and it is yum.

    Good evening All :)

    So what have you all made for lunch tomorrow? I have packed some falafel, pitta bread, hummous and salad. I'll crumble a falafel or 2 into the pitta, along with the salad and hummous.
    It's one of my favourites for lunch.

    I have also packed 1 litre of orange squash (i am trying to drink more!) and some fruit salad.

    Oh wow... I want your lunch it sounds fantastic!! Haven't decided yet can't decide....mmmm

    Thanks, DC. It's the only lunch that i dont ever get fed up with if i have everyday for the whole week :D I sometimes add a dollop of sweet chilli sauce too...drool!
    It can be a bit messy to eat while driving, but easier if i can pull over for 10 mins to eat.

    Bircher breakfast made last night and left over roasties for lunch with me. Not the most exciting of lunche s but I love roasties and they were spare :)

    Is it really Monday already again?

    hi Soworried, it's incredibly easy - basically you soften some onion and garlic in a frying pan and then throw in one or two cut up good-quality cooking chorizo sausages (some recipes advise you to cook the chorizo in oil first and then the onion and garlic, as the chorizo releases the paprika along with its oils and that flavours the onion and garlic, but they take on the flavours anyway really). Then you throw in some cut-up potatoes - I had four potatoes left so chucked them all in - and fry those for a minute or so. Then you put in chicken stock (I used about 500ml, maybe a bit more? .... enough to cover the potatoes and chorizo). Then you simmer it for about 20 minutes, till the potatoes are softened, then throw in the cabbage, sliced reasonably finely, and cook that for another 15 minutes or so. That's it - you don't blend or anything - it's a rustic, chunky soup. I used a recipe that suggested mixing up a paste of smoked paprika and olive oil and swirling that in at the end, which I did.

    OK, I have a day off today, so don't need to worry about taking lunch to work. I have one serving of caldo verde in the fridge and one serving of chicken soup in the freezer. That leaves Thursday uncatered for. I'm going to cook up some leftover steak, broccoli and leeks with rice and a rendang sauce thing I have had hanging round in the pantry for ages (a packet thing, but it looks nice). Then I'll freeze some of that for next week.
