Generali's Test Match Picnic (does 6 a day for 2 days no sweat):
1 whole roasted chicken - £6
2 shredded lettuces £1
1 kg potato salad* - £1.50
Roasted courgettes, aubergines, onions and peppers £5
Cous cous with mint and sultanas £1
Spring onions £1
Tomatoes £2
A small salami or 2 £3 or £6
Bread £2
Butter £1
Olives £3
Pea, broad bean and mint salad for the earlier test matches (peas, skinned broad beans and mint in a light lemon vinaigrette) £1
Some poached salmon (boil a kettle, put the salmon in a bowl or saucepan, pour over the boiling water and leave for about 10 mins) £5-10
Total £32.50-£40.50. I think I've been pretty generous with prices too.
*The potato salad is 1 kg bag of new potatoes tossed while still warm in either home made mayonaise (with an extra garlic clove or 2) or vinaigrette if pregnant people are with us (5 parts oil to 1 part vinegar) with chopped chives or paprika on top.
That should fit your budget pretty easily I would think.0 -
I'm looking for some ideas on what will travel well and stay intact to take on a picnic this weekend. Its just going to be three of us (me and my parents) but we'll be out all day so need a few things to keep us going. Hi Toonie,
There's an earlier thread with lots of ideas that should help so I've added your post to it to keep all the suggestions together.

Hi,
Tomorrow I am going to be going to a picnic, but it's not been organised that well. I need to take a little but of food but am limited as am at a catered college at university, and we only have a little kitchen with a microwave and a fridge, so it would be hard to keep/prepare food.
Preferably I want something filling, which is cheap, doesn't require a lot of preparation and isn't hard to store.
Any ideas?
Thanks.

what about a syrup sponge?
You could cook it just before you have to leave. Ok it will be cool/cold when you eat it but if you did some custard and put it in a flask that would prob still be hot. All you need to pick up is some cheap paper bowls and spoons from asda or somewhere like that?
Then just take some golden syrup in a squeeze bowl, maybe some jam,
Also if you transport it in a "cool" bag that will help keep it warm.
But to be honest you could cook it and make it into a makeshift victoria sponge, It would be a bit crumbly but could just get away with it.
I can suppy the recipe if you need it. Pushed for time right nowJeremyMarried 9th May 20090 -
The recipe would be great.
I do have some flour and things. I could just buy stuff but I think it might be expensive...

This is enough to fill a pyrex basin about 17 cms across.
4 ozs self raising flour
2 ozs sugar
2 ozs marg
1 egg and a bit of milk.
Mix everything together untill smooth with a whisk.
Cook in the microwave on full power till a knife comes out clean. Depending on the power of the microwave about 4 or 5 mins.
I am not sure if it would work but you could add coco powder to make it a chocolate sponge.
If you did make this into a victoria spong cake type of thing it would be crumbly but it could work.
Hope the picnic goes well.JeremyMarried 9th May 20090 -
How about some crudites and dips? Just cut up carrots, cucumber, celery, whole cherry toms and take some hummous (home made if yu have a blender to blitz some chickpeas, lemon and garlic) and some sour cream.
Or just buy some nice crusty baguette and a couple of types of cheese (Tesco value brie is very good)?
Make up some couscous in the microwave then cool and add some spring onions, oilve oil, chopped sun dried tomatoes, a tin of chick peas and some cubed feta.
Hope that helps.
