This is the first time I bought a whole round in the UK - I usually buy them in France and I've always found that the texture is pretty much the same as when it goes into the freezer. I should say I have bought a French brie and not an English one and I think it is a better flavour. There's only 2 of us as well so it does last a fair while as we don't have it in the fridge all the time, just now and again. The piece we finished recently was the last piece from when we were in France at the beginning of March!
With regard to the Stilton I've got no idea as not tried freezing it before but suspect it might be a bit crumbly like cheddar as it is a harder cheese than brie.
