Thanks everyone who commented on my 'beef skirt' posting. I have spoken with the butchers and they understand what I want. Hopefully they will put some aside together with beef kidney for me to collect next Wednesday - winter is arriving.......
Joedenise:- I know Rooks (butchers) well, we also had a spell of living in Kent before moving here in 2006. I used to love their cooked flans.

Out: bits of turkey, bits of ham, plus bendy vegetables from the fridge to make a cross between soup and a stew for tea last night - all cooked in the ironheart woodburner. Leftovers for lunch today.3 -
So am a bit late to this discussion, but this morning on BBC Saturday Kitchen Live, there was an insert on cooking Onglet steak, which a quick google search showed as the French name for British Skirt. If nothing else, it showed me how to cut out the tough, sinewy bits and how to marinate it. Definately worth a look on iplayer i think.zafiro1984 said:Thanks everyone who commented on my 'beef skirt' posting. I have spoken with the butchers and they understand what I want.
