Eating out of the freezer and cupboards challenge - part two

    Using up 2017 freezer stored batch cooked recipes (several of each):-

    January 2018 = 12. Today's was a bread recipe.

    Freezer getting more full again due to more post Christmas 2017 season "yellow-sticker" purchases!

    No 2017 freezer recipes used up today but am working on two which are in the fridge to have over the next few days.

    In: 2 slices tinned pineapple
    Out: gammon steak, tinned pineapple, hummous, rib roast of beef
    Used up: portion of spag bol sauce + tin of kidney beans (given to my Dad), small avocado, flat mushrooms

    Took the brave step and tidied out/ re-inventoried the tin shelf in my larder cupboard. Took longer than it should have but surprisingly satisfying!

    Did a food inventory last week. It wasn't my most thorough as I generally try to record the Use By/Best Before Dates on the inventory which I didn't do this time , but I did keep an eye out on the dates and thus discovered a bag of walnut pieces that need eating up within the next month. So I am trying to incorporate a few of them into my breakfasts.

    I still very much love this challenge but find it hard to post during the week and although I keep a 'mental' list of what I have used up my memory is unreliable and I find I can only remember to post about a few notable items banished from the cupboards at the weekend.

    I need to lose weight this year as my primary goal and have finally gotten a reluctant and fussy eater OH on board to try new healthy recipes each week which he can jazz up with chicken nuggets or something so he doesn't feel deprived.

    In the last week I bought so many vegetables that I had to get creative about storing them and OH looked at me doubtfully and was certain that we wouldn't eat them all before they went off.

    I am pleased to report that with a rigorous meal plan and making cooking from scratch the main focus of the evening (instead of TV) that in the week we have eaten all the carrots, new potatoes, baking potatoes, sweet potatoes, cauliflower, peppers, tomatoes, parsnips, courgettes and onions. All we have left is a sorry looking apple and a tiny wedge of cucumber.

    We have also Used Up the cottage cheese, mozzarella, halloumi, greek yoghurt, blueberries and the leftovers that were created.

    In this week I have finally used the spiraliser I got for my birthday in 2016 and made a recipe from a newly acquired cook book.

    There is space in my cupboards and although a larger then usual food shop is planned for tomorrow we aren't going to leave the house until we have meal planned.

    I also have not done any shopping of any description since Monday, so 4 NSDs in a row!!!

    I like this challenge a lot and all who participate in it.

    No weekend local shopping today. The weather was off-putting and also caused unsuitable road conditions for using my bicycle. Tomorrow will probably be the same. It might be the end of this month for an online (food) grocery order; depends upon the person I share delivery costs with.

    Oh dear I am failing spectacularly with this ...even considering my upcoming need for home cooked ready meals due to an op i an still way out of balance far too much going in.

    Today I took nothing out but put in 5 veggie burgers, 4 portions of beef in red wine, half a banana loaf and half a loaf of bread. :o I despair of myself :D

    Homemade pizzas last night so not much going on in the cupboard/freezer department.

    OUT: bag of grated mozzarella, 2 par baked ciabatta rolls.
