    Beef casserole is in the slow cooker bubbling away and that should be enough for three meals. Got plenty of veggies leftover plus some sausages from the TITH I made a couple of days ago so I'll make a sausage casserole on Wednesday, so that's my dinners for the week all sorted :)

    I'll need to do a bit of shopping to top up the salad I have for lunches, but other than that, no spending required.

    Hi everyone :) Think Im going to start this too. My cupboards and freezer is full of stuff I havnt used in ages!

    Evening all,

    Well, yesterday's slow cooker beef casserole wasn't a success as it didn't have enough liquid, so lesson learned for next time around. Problem is it means there is nothing for dinner tonight or tomorrow so I'll be improvising a bit. Got some tuna, eggs, crackers and salad that's only a little bit past it, so might well be a sort of Spanish omelette.

    jacket pots and salad for lunch today and planning on mushrooms with toms and stilton and going to slice up and fry some jersey royals i cooked on sunday

    Out of the cupboard tin of tuna. I made it into a salad for lunch with sweetcorn,spinach and some low cal mayo. Nothing in and nothing in or out of freezer.

    I did a spag Bol in my slow cooker yesterday using 500 gram of lean mince out of freezer, had it with home baked garlic bread. Got another three portions for me and the kids again tonight. I did ask the kids if they wanted it again tonight if not I would put it in freezer but they enjoyed so we are having it again. Did the sauce using passata, chopped tomotoes, herbs etc. onions and mushrooms. So a meal for three people for approx 2.50. Very frugal if I say so myself. Tonight I will only have to take out some muffins to make homemade garlic bread. Nothing in the freezer as it's full to the brim. X

    My freezers are heaving!
    We had HM Pie + roast potatoes + cabbage/carrots for dinner. Mr F got a pack of diced lamb in Mr A - whoops from £4 to £1.40 - Hotpot on the menu!

  • Going to make some puff pastries with cheese & bacon today. Me and the kids love these. The amount they charge in Gregg's for these is shocking, I can make 6 for around 2 pound in cost. Plus they are so much more nicer homemade.

  • Made my slow cooker sausage casserole yesterday and it was lovely (although a bit too salty so I need to find stock cubes with no/low salt for next time). Being an idiot though, I decanted the excess into a tupperware bowl to cool down before storing in the fridge and then promptly fell asleep for a few hours. Woke up and went to bed, forgetting to put the casserole in the fridge so I've had to throw it as I don't think it would have been safe to eat no matter how well I reheated it. :( I really must get better at this, I HATE wasting food.

    So, given that neither of my recent casseroles have provided the three meals that I had planned, and I'm far to frugal to buy yet more groceries, I've resorted to store cupboard/fridge reserves of eggs, beans, crackers, tuna and pasta. Not exactly exotic is it but at least it is no extra expense. Oh well, I'll try again next week.
  • Peri peri chicken wings out of the freezer that I picked up in sainsbury's reduced. Going to do some savoury rice, corn on the cob with it. Kids love Nando's so they should enjoy.
