    I used to cook a roast every Sunday but somewhere a long the line this tradition stopped. I cant cook beef, it never turns out pink and moist which is how we like it so its normally chicken for us when I do them.

    This Sunday we are going to have cottage pie, Ive never cooked it before but after spending time on this board Ive now got the confidence it give it a go :)

    I only do a roast about once a month. I usually roast 2 chickens and then have roast dinner.

    Strip the rest of the meat off and freeze and do chicken and leek pie or cobbler the next week. Then other weekends it's toady hole, lasagna, sometimes shep pie - all the stuff I don't have time to do in the week.

    As Sundays are the days that the other half spends with his son every two weeks, and they eat out, and some of the remaining Sundays I am stuck at work, the weekly roast for us just isn't an option.

    Furthermore, DD is vegetarian, which makes roasting a joint even more pointless in our household - I will roast an occasional chicken, and make the !!!!!! bounce about for the rest of the week ;) The rest of the time, when a special meal is required, just to mark the occasion of a "free" Sunday, if nothing else, it's most likely to be a pie, with roast potatoes, veg, onion gravy and yorkies.

    We are a Sunday roast in the winter, Sunday BBQ type meal in the summer household. If I don't have time or am not feeling up to a roast, I will cheat and do a pie or sausages with roasties & veg.

    If I cook a roast then it is on a Sunday but we don't have one every week. It is usually every 2-3 weeks. I often cook it in the evening and I find it one of the easiest meals to do.

    I most often do chicken, pork or gammon. Roasting joints of beef and lamb seem too expensive. We had beef this Sunday though -a piece of brisket which I pot roasted.

    The best thing about a roast is the leftovers:)

    I like doing a Sunday roast as well (and the kids love it!) but if your OH wants a special meal on a Sunday, and money is a bit tight, you could do:

    - salmon en croute, with new potatoes and veg, or I like to do it with a cold rice salad. I make mine by mixing one (raw) fillet of salmon with a small tub of creme fraiche (reserve 1 tbsp first) and a bag of spinach. Season well. Spoon into a sheet of puff pastry, mix the 1tbsp of c/f with a little cold water and brush top to glaze. Cook at 220 for about 20-25 mins until golden brown. Salmon can be expensive but you don't need a lot for this recipe.

    - pasta with smoked salmon off cuts, or a frittata or quiche with these. A little smoked salmon goes a long way, and the other ingredients are cheap

    - pan roasted fish - I use a white fish, dredge in flour, fry very briefly in a little oil on the top of the cooker, and finish off for about 15 mins in the oven. Serve with saute potatoes and a nice salad. Any white fish will do, and you can get some kinds very cheaply.

    - a rich casserole - something like beef in red wine sauce, and use the left overs for a beef pie later in the week. You can use a cheap cut of beef as you're cooking it slowly.

    And all suitable for pregnant ladies too...
  • I've never mastered the art of gravy from scratch, especially without a roast dinner. Can anyone help?

    One of the easiest ways to have a trouble free roast is: chicken leg each, halved or quartered potatoes depending on size, carrots, parsnips, onions (whole), season and drizzle with good oil and roast at about 180c for about an hour...no hassle and one dish to wash...

    I live alone so make a roast dinner maybe once a year (apart from christmas etc). It just seems too much effort to goto for one person. Maybe we should start a singleton roast dinner party, where we take turns each week?

    I would sometimes buy nice pepper chicken from the butchers and have with Mash, Sausages and mash, beans on toast, again as someone previously said it's just another day to me, so i just have another normal dinner. If i had friends round, i would be making a fuss and cooking something delicious. Once upon a time I did make a roast dinner on Sunday and take one into work on Monday but not done in years

    An ould fry up dinner would also be more regular, some combination of eggs and beans and toast etc.
    A little nonsense now and then is relished by the wisest men :cool:
