we usually have scrambled egg with smoked salmon and Bucks Fizz to drink, last year I made the potato scones and they were delish so will be making again. They are much better than the shop bought ones

  • I made these Muffin Melts for Christmas day breakfast last year after someone on MSE mentioned them. They were absolute heaven and all the prep was done the night before.

They are now a Christmas tradition although I confess I will also be making them for a bonfire next weekend as I think they will go down well when people are standing outside in the cold.

I've also made lots of other things from Ree Drummonds website. Her recipes are fab.

  • Prepare French toast with berry compote
To prepare it follow the step.
Make berry compote: Place sugar and 2 tablespoons of cold water in a small saucepan. Stir over low heat until sugar dissolves. Increase heat to high. Bring mixture to the boil. Cook for 3 minutes or until mixture thickens slightly. Remove from heat. Stir in berries. Set aside. Place eggs, cream and milk in a bowl. Whisk until combined. Combine sugar and cinnamon in a shallow dish. Melt half the butter in a large, non-stick frying pan over medium heat. Dip 4 slices of bread, 1 at a time, in egg mixture until soaked. Cook bread for 2 minutes each side or until golden brown. Remove from pan. Toss in sugar mixture to coat. Cover to keep warm. Repeat with remaining butter, bread, egg mixture and sugar mixture. Serve toast with compote and yoghurt.

I make a batch of these when we have people over for brunch (usually on Boxing Day). They're delicious. Beyond delicious. I have been known to eat three or four of them along with other treaty festive brunch bits.

    I'm sure I had four - I don't feel quite so embarrassed now:D

I did leave out the garlic powder though as I thought that may be wise but I followed the rest of the recipe. I did think about buying some long baguettes, slicing them lengthways and covering with the mixture before grilling. Actually maybe I'll try that next week and see how it does.

Well I think I know what I'll be making in case my parents are hungry when they pop over in the morning! Thanks :D

Let us know how the baguettes go :j
