Today needs a chocolate cake. There is nothing else in the world that will do- but yet again I have no eggs, so looked you up for the eggless cake- turns out I also had no oil, so used marg, only half the cocoa, so used half hot chocolate, and the oranges I wanted to use up, were dried shrivelled and a bit sour! :rotfl:
Think I'm scraping the (biscuit) barrel with this one, but she's gone in , fingers crossed. Buttercream hides a multitude of sins!
Ps the. Kit Kat cake amazed me- I just need to find a suitable occasion , and for that I will go to the shops and get the ingredients.0 -

Baking is on the cards for me this weekend-finally replaced the mixing bowl on my stand mixer so I can make meringues which are my love!!!
It's an old ken wood mixer the family have had for years and I took over! But we lost the mixing bowl-until a few weeks ago I found it-being used by my grandmother-as a Plant pot on the windowsill!!!! Hahahaha! Morning all. I've just read this whole thread and I think you guys are amazing bakers! I love baking so I might have to see about taking some pictures and putting them on here. Today is the second of three Christmas cakes, always use Delia's recipe but this year 2 of the cakes will be gluten-free as both of my sons have girlfriends who are gluten free.
I'm also practising basic things like scones, never really got into the basics before. So far, so much better than bought, if a bit rough round the edges.
Stewby, I'm not stalking you, honestly, but you keep on amazing me with your new found money saving ways. If there is an award for Best New Moneysaver you are a dead cert to get it.

This is the recipe, however, I have made it and think it would taste just as yummy without the chocolate chunks. They are quite sweet.
I plan to try making them with caster sugar instead of brown sugar as I don't really buy brown sugar at all.
Using the measurements there (although I put in extra syrup), I managed to make about 30 biscuits.

I think this may be my new favourite thread! Does anyone have any gluten free baking recommendations? I love baking (although I'm not terribly good; have perfected the Victoria Sponge and not much else) but am also having to go gluten free. Board hopping from MFW - today we made lemon drizzle cupcakes which have turned out lovely -
As a general rule, sponge is easy just weigh your eggs and use the same of butter / marg, caster sugar and flour (SR or plain with baking powder)
3 eggs (200g in my case)
200g caster sugar
200g butter / marg
200g SR flour
1 lemon (works well with a lime too, or an orange)
100g of sugar for the topping (doesn't really matter, we used granulated)
Cream together the butter and sugar, then mix in the eggs and flour and beat for a few mins until well mixed. Add the zest of your lemon.
Divide into baking cases (we used a muffin tray and muffin cases and got 12), bake for 12-15 mins until they spring back to the touch.
Whilst in the oven, make the drizzle by mixing the juice of the lemon with the extra sugar. Once they come out of oven drizzle on whilst hot.
Yum yum yum!

Thanks very much for this recipe. I used it today to make some lime drizzle muffins and they went down VERY well at my evening class! :cool:
