I have had issues with this as well. It shouldn't matter how much you pay for it, if you ask for it rare, surely it should come rare, otherwise why bother asking you how you want it?
Depends on the restaurant, I now do that, order blue to get it rare...
I agree that there is no point in asking if they can not do what your asking for.
However, if paying top end prices, I would just expect more consistent quality and care over the steak. Though in the OP case getting well done instead of rare is a bit to much.0 -
I always ask for rare and end up with medium rare which is what I wanted in the first place. If it's not cooked as you wanted just send it back or refuse to pay and walk out or accept what you've been given and enjoy. Unfortunately a nice evening out can be be totally ruined by complaining which will also affect whoever you're dining with. There's nothing worse than going home on your own0

Yes you're going to bad restaurants. A decent restaurant will be able to cook a good rare steak. A weatherspoons won't be able to do that.0

The quality of the chef is dictated by the quality of the establishment. A chef at a low quality restaurant like weatherspoons won't be that skilled and is more likely to not know how to cook a steak. In addition the quality of meat is so poor at a spoons that its probably not a good idea to have a rare steak!0 -
The problem is particularly bad in pubs, and perhaps that's a point, that the meat isn't of good enough quality to be served rare.
But I've also had it in quite a good local restaurant in London, and more recently in one of Lonely Planet's top three restaurants in Georgia. In this latter restaurant, my steak took forty minutes to be served - did I really want to complain and risk having to wait the same amount of time again? But I'll try asking for my steaks blue in future - if they really are underdone for my taste then I can easily send them back to be cooked a little more.0
