I wedged them and steamed them in the microwave for a few minutes to soften, then roasted them. Only actually made them once though.0

I either nuke them in the microwave for a few minutes or parboil first. I like my wedges fluffy inside and crispy outside, although
I suspect potato variety has as much to do with that as cooking method.0 -
I blanch mine in boiled water first.
When I am boiling the kettle for a coffee, I put a bit of extra water in and par blanch my wedges in a pan with the lid on for 10 minutes. Then I shake them in duck or chicken fat saved from previous roasts. It is nice with the juices from gammon also. Add a pinch of salt and roast.

Chuck wedges in a big plastic bowl with oil, S&P, spices and whatever. Toss until coated and chuck in oven0 -

I do mine on the foreman, never parboil mainly because I forget and we end up with mash. :doh:0

I always find though when you par boil them, they come out softer and not as hard as they do if you just throw them in the oven. I will give it a go though!!!!Raven. :grinheart:grinheart:grinheart0

I just cut them up and stick them in the roasting tray. I add anything else, oil, spices, herbs and maybe later even cheese :eek: to the roasting tray. Cook on hot, hot, hot!
I cannot justify the extra washing up.

I par-boil, leave to cool, then shallow fry in a little bit of oil in a frying pan till just browned. Then throw them in a roasting tray (no extra oil) in a very hot oven for half an hour. This is a method I got from my dad, and although may seem like a bit of a faff it gives the most divine wedges/chips - soft and fluffy on the inside and crispy on the outside, not soft or oily.0

I put the whole, unpeeled but washed potatoes into the microwave for 5 minutes, then I let them rest for 5 minutes, cut them into wedges, sprinkle oil and paprika over them an put in a very hot oven until goldenBlessed are the cracked for they are the ones that let in the light
