    I made Cajun potato wedges the other night using a Schwartz mix and I'd like to try making them myself. Does anyone have any idea what spices I should use, please, (and in what ratio/quantities.) The spices I have to hand are:

    Coriander
    Chilli
    Nutmeg
    Cardamon pods
    Cumin seeds
    Paprika

    Also, this is going to sound like a really dumb question (but here goes anyway!) how do I make breadcrumbs? I have bread and I have a powerful blender (no food processor), can I put the bread in as it is and hope for breadcrumbs, should I toast it first or is it just not going to work in a blender?

    I use 2 recipes, a big and small mix, depending what I've got available

    shezhaum pepper - 1/4
    smoked paprika - 1 1/2
    garlic powder 1/2
    black pepper 1/2
    basil - 2
    thyme - 2
    bay leaf - 4 off
    cayenne pepper - 1/4
    cumin - 1/2


    cumin - 1/2
    thyme - 2
    smoked paprika - 2
    garlic - 1/2
    cayenne - 1/4

    as for breadcrumbs, let it go hard before you put it in the blender

    Thanks, Pretani. I've just found some cayenne pepper in the cupboard (no idea how old it is though :D) I think I can cobble together a mix of both yours and add the rest to my shopping list!

    You can use your hand blender for making breadcrumbs. Put your bread bits into a bowl, cover with cling film make a slit in the middle insert the blender & go. This method will prevent the crumbs from going everywhere. If wanting breadcrumbs for a coating you first need to get the bread as dry as poss. This can be done in the oven or just by leaving the bread uncovered so that its dries out. Another method is to toast the bread crumbs using a dry frying pan.

    that is the question

    I am making home made potato wedges but wonder should i remove the skins and if I did, would they work just as well?

    Could I cook them in the Actifry or will they fall apart?

    I never peel mine to be honest - good scrub, chop them up with a drop of oil on the tin, then sprinkle paprika over them and cook!
