Potato Wedges? - All you ever wanted to know about how make potato wedges

Hey there
Wedges - get the spuds, cut into wedges, toss in oil, put on a tray in a hot oven (200C) for 20 minutes.
Then either pull them out, let them cool and freeze them, or give them a shake-about to loosen on the tray and give them another 20-or-so minutes. Job's a good'un.
When you come to cook the wedges from frozen, just make sure they're separate from each other, toss in a little more oil and cook in the hot oven again for around half an hour, or until cooked through (depending on how big you like your wedges!).
Good to have knocking around in the freezer - and brilliant for a quick dinner with chili!0 -

Basically, you make the potatoes into wedges, coat with olive oil and sprinkle with salt. Cook on a non-stick tray until they are only just done, then stop and freeze them in bags.
Reheat as oven chips
Have you thought of gnocchi (can't spell, sorry)?
Ugh, you beat me to it!
....oh, and "gnocchi" looks fine to me0 -
Thanks to you all for the ideas and recipes, I'm sure I'll give them all a try - will certainly keep me busy over the weekend0

Bake potatoes until soft , in the microwave.
Slice in half , and scoop out the middles, mix in a bowl with cheese, and a tsp of mustard . Put back into the skins , sprinkle a little more cheese over the top, and bake until skins are crispy .( you can use any filling you like , spring onion , or celery are both good ones with the cheese )0 -
This is our favourite recipe for spicy wedges:
peel and cut the potatoes into wedges and par-boil for about 3 or 4 mins
drain them , give them a shake in the pan then add some olive oil, sun-dried tomato paste (or tomato puree) and some chilli powder to taste. Mix until the wedges are all nicely coated.
Roast them until they are golden. No need for any other oil in the roasting tin by the way!
I haven't frozen these before but I see no reason why they couldn't be frozen and then reheated.Penny0 -
one of our fav potato recipe is.
thinly slice peeled pot's. and onion's. i grease a liddled casserole dish. then place a layer of the thin sliced pots iverlapping them ( can make them look pretty or as unpretty as u like) then few slices of onions and handful of frozen sweetcorn and a pinch of salt. then keep repeating this till dish is full and have pots as the last layer. i then use 250ml hot water with a veg oxo in it and pour over. then sprinkle cheese on the top. put lid on and i cook on gas 5 for about 2 hours. can do it quicker or long if u like it a really easy recipe. Can serve on it's own or with anything really.
as variations can add tuna in the layers or bacon. or anything or fancy and needs using.
AS for spuds tho. i always keep mine in a fridge and they last up to about a month if not more.0 -
We went out for dinner last week and had the most delish wedges for our starters.
These were large ones perfectly cooked
I know wedges are just large pots cut then baked till done but can anyone please tell me how I cut them right. The ones ive 'tried' to make before have turned out very small and dry
What size pots should I be using?Mad Mum to 3 wonderful children, 2 foster kittens and 2 big fat cats that never made it to a new home!

I just wash uncooked potatoes and cut them in half length ways then cut these into three on the angle to make a wedge shape.
They go into a large bowl with some oil and spices or whatever I fancy on them and give them a good stir to coat them well. Then chuck them into the oven giving them a good shake about every so often.0 -
i season mine iwth sea salt black pepper and garlic then dip in garlic mayo and home made bbq sauce. I usually have these when i make my chicken nuggets.
You can if you wish sprinkle a litle parmesan over them as well.
Enjoy.
