Malt loaf.

morning all, does any one a recipe for malt loaf? I had a look through the recipe collections, but the recipe I would like does not have bran flakes in. Its a sticky one like Soreen. I also dont have a breadmachine (yet!)

Make the one in the index without bran flakes in it and use about four times as much syrup as the recipe. You'll get close to the soreen recipe. Ish. I've just put a malt loaf recipe on my menu planner:
Malt Loaf Recipe
Preheat oven to gas mark 4. Put 3 weetabix, 4oz sugar and 40z of raisins or sultanas in a mixing bowl and add 1 mug of hot black tea. Leave to soak until the mixture has gone cold. Stir and add in 2 eggs. Stir again and add in 4oz self raising flour and 2oz porridge oats (optional but if not using oats substitute for 2 more ounces of flour). Oooh - CQ - are thee and me going to be making this today?
My kids just love Soreen, but it's so bloomin' expensive. I used to get the Tesco Value one (more sultanas than none value one!) but they've stopped doing it (at least in my store) And the Aldi one (much cheaper) contains Hydrogenated Veg oils, if I remember rightly0 -

If you can get the malt bread flour from http://www.wessexmill.co.uk/ (they do mail order or have a stockist search) it makes a gorgeous malt loaf. It isn't quite as sticky and squidgy as Soreen, but it is just the right taste and colour and keeps well for several days.
The flour doesn't have anything too nasty in it either:
Wheat Flour, Malt Flour ,Sugar, Flour Treatment Agent (L-Ascorbic Acid)
You add yeast, a little butter, water and fruit of your choice. I would highly recommend it0 -
I can vouch for Black Saturn's malt load, dds and ds took some into school yesterday, it seems that it stretches a long way too as most of their friends got to try it too! Several have requested the recipe so that they/their mum's can cook it.

I was going to recommend the Tesco value one. I bought it for the first time last week and my son loved it (I never got a chance to taste it!). Ask your Tesco if they'll get them back in.0
