malt extract is easily available from health food stores. I also saw it in Waitrose today, in their supplements section,
It's a very sticky malty substance, I love to eat spoonfuls of it (although I hated it when I was a child).0 -
Fool proof malt loaf:
225g/8oz plain flour
½ tsp bicarbonate of soda
1 tsp baking powder
225g/8oz sultanas
50g/2oz demerara sugar
175g/6oz malt extract
1 tbsp black treacle
2 eggs, beaten
150ml/5fl oz strained cold black tea
Method
1. Preheat the oven to 150C/300F/Gas 2. Grease and base line 2 x 450g/1lb loaf tins with greased greaseproof paper.
2. Measure the flour, bicarbonate of soda and baking powder into a bowl. Stir in the sultanas.
3. Gently heat the sugar, malt extract and black treacle together. Pour on to the dry ingredients with the beaten eggs and the tea. Beat well until smooth. Pour into the prepared tins.
4. Bake in the preheated oven for about 1 hour or until well risen and firm to the touch. Allow to cool for 10 minutes in the tins before turning out on to a wire rack to cool. These loaves are best kept for 2 days before eating.
This is the recipe I've been using for ages, it's from the BBC site and I can promise you it's absolutely delicious - but it's definitely best if you leave it to mature for a couple of days before cutting into it.

Does anyone have a recipe for making sorreen .not the malt loaf one that uses weetabix ,would really like to know been looking ages and cant find one.0

Do you mean a tea loaf? Have a easy recipe for this or I have a nice malt loaf recipe that doesn't have any weetabix in it.

Malt bread
14oz sr flour
2 tsp bicarbinate of soda
4 oz sultanas
8 fl oz milk
4 tbsp golden syrup
4 tbsp malt extract
2 eggs
Grease a loaf tin and set oven to 190c. Sift flour and bicarb into a large bowl.Add dried fruit. Warm the milk, syrup and malt extract in a saucepan. Beat the eggs. Stir the mixture into the flour. Put in loaf tin and bake for 40 to 50 mins.... I havent tried this recipe yet as I dont have any malt extract but it looks yummy.
