  • HI, does anyone have a recipe for malt loaf. I fancy making one:D But cant seem to find a recipe. Have tryed searching the recipe index on here but there doesn't seem to be one!

    Hi there - just found this on uk tv food :j
    2lb loaf tin - line with greasproof
    preheat oven - 140c / 275f /gas1
    8TBS MALT EXTRACT - ADD TO -
    90ML HOT STRONG BLACK TEA -LEAVE TO COOL
    MIX -
    170G WHOLEMEAL SR FLOUR
    GOOD PINCH OF MIXED SPICE
    80G RAISINS
    80G SULTANAS
    ADD 1 EGG AND TEA MIXTURE... MIX WELL AND SPOON INTO TIN
    BAKE FOR 1 1/4-1 1/2 HR..TEST WITH SKEWER TO MAKE SURE IT IS DONE,
    LEAVE IN TIN TO COOL FOR 1/2 HR
    TURN OUT AND COOL
    WRAP IN GREASPROOF AND STORE IN A TIN FOR AT LEAST 2-3 DAYS TO ALLOW FLAVOUR TO DEVELOPE..
    I havent made 1 of these for years...i may have to soon:D ...you could try soaking the dried fruit in fruit juice or alcohol overnight before making mmmmmm:T

    MRSMCAWBER - is your recipe like Soreen? I love Soreen, but refuse to pay their prices, especially as one loaf wouldn't last more than 5 minutes!

    Hi there justamum
    Its pretty sticky...but if you want that really dense texture you get with soreen , then i would use more dried fruit...perhaps an extra 80g of each, soak it over night..you can use cold tea/orange juice if you dont want to use alcohol...and then when it comes to making the cake - blitz some of the fruit down..i use a hand held blender for my big xmas cakes (mmmmmm:D )..but with there not being much fruit you may be better off tipping it onto a chopping board and chopping it with a big knife, of use one of those double bladed herb choppers and then just make the cake as per the recipe..it may take a little longer to cook but you should find the finished loaf is more dense and juicy...just dont forget to wrap it up and leave it for a few days....no nibbling...:A i know its torture but it should be worth the wait :T

    My mum used to cook weetabix cake, havent a clue what the recipe is though but she got it off a packet. It might come up on google?!

    OOOOOOHHH just checked out the weetabix cake thread...i was doing allright until someone said it reminded her of bread pudding...eughhhhh
    Its the only thing my mum ever made that i couldnt eat (that i remember)...my mum was and in fact still is the best cook i know..:j ...fortunately i have inherited the genes...oooh that sounds terrible:D .....still i have to be good at something ..and cooking is it :T .... i have even won mums title for the best ever xmas cake.....i now make xmas cakes, pudding and mincemeat, mincepies for me.....1 sister 1 sister in law and 1 brother 1 mil - other brother and mum are with us for xmas.... there is upset at the mo as im moving to germany at the end of the month so only mum and brother will get any goodies as they are coming to stay:D

    Has anyone got a malt loaf recipe? My hubby likes the stuff, I don't. I would really like to make hime some. I have found a couple of recipes, these use MALT EXTRACT, what is this?:confused:

    You can buy it in a Chemist, and comes in a jar like jam. You will probably find it in the area where you can buy Complan and the like - its a sweet, sticky syrupy substance.

    Remember to let Malt Loaf sit a coupl of days wrapped in greaseproof paper to get the best stickyness.
