Thanks for that keren, the chicken is 2.3 kg it doesn't say pounds. I got a big one because I thought I could make a casserole or soup or something with what's left.

And Toto - no pinching any of the skin.........no, not even that lovely little crispy bit stuck on the foil...........;)

toto when i'm cooking a chicken (i have cooked about 3 or 4 now ) i was told to put it in a pot of water half way up the chicken and boil with a lid on for a hour or as karen says till the juices run clear it tastes so juicy this way (think it does with the oven way as well though) and then use the water that's left over for soup (taking the yucky bits out first ofcourse) just an altertnative way if you fancy trying it next time i'm sure karens is the best though

Toto- the chicken should be smelling yummy now!

When you take it out of the oven let it rest for about 5 minutes or so, it won't go cold, just pop the foil back over it.

The analogy I once heard as to why is if you sat your bum on a gas ring for a second you would clench the muscles with the heat.

That's what happens with meat - the heat makes the muscles in it clench. If you rest it, the muscles relax and the meat softens - the same effect as the 'aaaaaaah' sensation of the heat subsiding and you relaxing the muscles in your bum!

Ok, so how many of us are sitting here clenching our bum muscles? I love that analogy, that makes sense. My ex spent ages trying to teach me how to tell when a steak is cooked by feeling the muscle between your thumb and first finger, relaxed feels the same as rare, hold the thumb gently next to the finger feels like medium and tensed pushed against the finger is well done. Doesn't work for me, you get steak as it comes in this house.

The chicken smells lovely, I'm starving!

I saw another steak tester thingy recently - middle of your forehead is well done, the tip of your nose is medium, the squashy bit just above your chin is rare.

You ex should have been doing the cooking Toto with his skills! ;)

He was keren, never let me anywhere near the kitchen, wise man. He just tried to teach me for when I was away and he couldn't feed me, like we cook steak on a tour bus!
