Have you picked a service provider and contract pn? If you call your current one get your PAC number, then call new one/ go on to shop , sign up and give them PAC number...they do it all. It doesn't take long. Been years and years since I did it, probably even quicker now!
Not picked one yet. Michaels suggested some outfit I've never heard of though.

Ah, so that PAC thing would be "almost instantaneous"? Not a few days/weeks?

Iirc its been less than a day when we have done it, within an afternoon. My guess is they say something like allow 24 or forty eight hours.

Does the new phone come with a card, or do I have to take the card out of one and put it in the other?

I get about 2 calls/month, so won't be missing any between services.

The new contract will come with the card, and if you do it in a shop they will put it in for you :D. I honestly would get PAC number for current provider the day you decide to go in and get it and then have them do all the sorting out.

I think PAC numbers are regenerated after a couple of days, so don't get it today if you aren't going to do anything about it for a few weeks.

Phone your existing provider today and ask them for a PAC code, chances are they will offer you a deal to stay with them. If they don't then the PAC code is valid for 28 days. It is only actioned when you give the code to the new provider, so there is no danger in being cut off from one with no service to go to.

It may come with a card to encourage you to sign up with them. No obligation to do so though.

I assume your phone is coming unlocked ie you can use it on any network?

All the little outfits piggy back off the main 4, so it doesn't matter if you have heard of them eg Tesco mobile use the O2 network.

You also need to work out how you are going to transfer your contacts' numbers from your old phone to the new one....

"will come with the card," - what card? I didn't buy a card, does a phone come with one?

    Ovivo piggy back on vodafone

You get the PAC instantly, you give it to the new company and the number switches some time the following day.

The phone may well be locked but you can buy an unlock online (for example from ebay) which will come with full instructions.

Transfering numbers will be a pain - one way is to make sure they are stored on your sim then move the sim into the new phone but this will be a problem for you because your old sim is almost certainly a standard size where as the new phoen will take a micro sim. It is possible to cut with scissors the sim to the smaller size but you need to be confident, the easier way may be to get an adaptor which makes the new small sim fit into a big sim slot, make sure all the numebrs are in your old phone, put the new sim into the old phone and copy all the numbers on to the new sim...did that make sense?

With an Android phone you are forced to set up a google acount when you set it up - do you have one already?
    I think....
