    I don't know what I am doing wrong, I made another batch of these today and like the last, they were chewy and soft. Even if I left them in longer, they still come out like chewy cookies rather than hobnobs, what am I doing wrong?
    I used an oven thermometer to make sure temp was OK and left them in for 15 mins but still no better. The last lots I put in a tin when cool and they just got softer.
    OH says he actually prefers them soft but I just want to get them right, help please :)

    Floyd - did you use butter or marg? Try the other to what you used. Can't think of anything else it could be. Maybe Master Chef Twink will come to your aid soon. :D

    floyd, not sure what you are doing wrong, are you following the recipe correctly? i am sure you are, remember though that a block of marg or butter is a bit more than 8oz now that its metric, is your tbsp of water too big?
    the mix should be quite firm before baking

    I used stork for both batches and weighed it on a top pan scale and measured the water with proper measuring spoons. When I combine the liquid and dry together, the mix is sort of crumbly so I have to squash it together to roll it into balls.
    Think I will try butter next time and maybe use a touch less in the mix and see how that goes.
    No probs with the taste though, they are fabulous, thanks Twink :)

    if the mix is too crumbly i think you may be over heating the melted marg, it needs only to be melted and no more, i do it in the micro, i have noticed the same if i let it get too hot

    My mix was way too crumbly the first time I made them as well :p the second time I used about 1/2 cup less oats. The second lot was a lot better ;) but still weren't as nice as Anzacs :D
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    Ah now that makes sense, first time I made them, I melted the marg in a pan and it disappeard as soon as it touched the oats, this time I did it in the micro and it was blood temp but I guess must still have been too much.

  • Well twink, another honour for you. For the last 12 days I've had a German Exchange student living with us and he had to write down in his work book one of the "Scottish" recipes he had tried while he was here. Guess what he picked - Twink's Hob Nobs. He can't get enough of them! I've bought him a packet of oats to take home but he's worried that he wont be able to buy more in Germany to feed his addiction.

    all this fame is too much, i will have to go and lie down:D hope your student manages to get porridge oats, maybe lidl would have them, mind you he mightnt be so keen if he has to make them himself
