Homemade hobnobs?

These are really lovely and really easy and thought this thread needed a boost. In fact I am going to make some right now!

Well I made one lot this morning and ended up giving them to mum and dad and now have another lot in oven for us unless anyone else gets to them first.....

Oh no,ive just discovered i dont have any Bicarbonate of soda(Duh),got plenty baking powder and cream of tartar(whatever that is??),but no Bicarb,gonna have to go out now.

If im putting I jar for a gift can I throw he vicar in or does this have to o into wet ingredients?

Ok I'm re wording it all!! Can I put the bicarbonate of soda in with flour as a jar

I've been making these every week for over a year now and everybody likes them, but the last few batches have come out horrible. They're either a bit too soft or the edges are crispy but the centres are either soft or have an odd dry and sandy kind of texture.

Any baking experts have a clue where I'm going wrong?

I haven't changed any of the usual ingredients, although I use the Co-op's value oats and they seem to be a bit coarser than usual, that's the only change I can think of.
