dont think i have tried freezing them but as i said before you could try a few demented and see how they are, the biscuits pictured made a batch of 46, i could have got 50 but i made the last few bigger, no idea about points but they will provide slow release energy for schoolchildren and workers

i have never made digestive biscuits but these are from the same book as the hobnobs

    4oz plain flour
    8oz wholemeal flour
    1/2 tsp salt
    3oz margarine
    2oz lard
    2oz soft brown sugar
    1 beaten egg
    4tbsps water
Thanks so much Twink, you're brilliant. Whole family stuffed ourselves yesterday on home made hobnobs, and making them kept kids entertained on a rainy day.
I'll give these a go later. Thanks so much.

let me know how you get on with the digestives BerkshireBird, quite fancy having a go myself

i have just made another batch with a slightly heaped teaspoonful of ground ginger and they are lovely, i would think adding small pieces of ginger as well would be yummy then drizzled with dark choc
  • Hi Twink

Whole family now have recipe, and my children are after making another batch with cinnamon and raisins. Sounds good, like your ginger.
Thanks goodness Lidl do flour so cheaply, huge bag about 30p.

Got any other recipes you use regularly??

    Thanks again.

the family are all away from home now dont bake as much now, always do scotch pancakes and occasionally do Mary Berrys family fruit cake, its good

mix all and beat 2-3 mins
    6oz soft marg
    6oz sugar
    gr rind 1 orange
    4 eggs beaten
    8oz sr flour
    12oz mixed dried fruit
    2oz glace cherries quartered
    1tbsp syrup

160oc, line the tin, i use tinfoil, 8 inch round deep tin
smooth the top and bake about 21/2 hrs or till skewer comes out clean
cool in the tin, i usually add some chopped walnuts and it keeps well, do fine for xmas too

give me some time to have a look at my recipe notebook, i may have more

I've made a few batches of the hobnobs since twink posted her recipie, and they go down very well in my family too. In the interests of healthy eating (!) I added a little bag of dried cranberries to the mix today, and very nice they are too! Quite like those cranberry "Tesco finest" cookies you can get when trying to impress the in laws

2 double batches of hobnobs later and my kitchen looks more like McVites factory now :rotfl: I've sent a lunchbox full into work with OH for him and the rest of the IT team (all 3 of them :rotfl: ) and I expect it to come back empty tonight ready for a refill! It took me 2 hours to bake them all yesterday (small oven and only 3 baking trays  ) but for some reason they're not calling to me (too long making them I think)... but they may find their voice later:o I'll also be giving the other recipes a try over the summer hols.:D

poor you, no wonder you are sick of the sight of them :D i have a boxful to put in the freezer so i will see how they are when thawed out, would think you would be able to take just what you need from the box for lunchboxes everyday that way they should last longer
